5-Minute Black Bean Dip

This easy 5-minute black bean dip is perfect for your next get-together, or keep it on hand for afternoon snacking
- 2 (14-ounces) low-sodium black beans, drained & rinsed
- 3/4 cup salsa
- 4 garlic cloves, minced
- 2 teaspoon fresh lime juice
- 1 teaspoon ground cumin
- 1 teaspoon water
- 1/8 teaspoon salt
- 1/4 cup minced cilantro
Mom's Chinese Chicken Salad

Mix together salad ingredients and toss with noodles and dressing
- 2 1/2 lbs. diced chicken
- 1 lg. bunch green onions, shredded
- 3 cups shredded lettuce
- rice noodles
- 1/4 cup toasted sesame seeds
- Dresing
- 5 tablespoons plum sauce
- 2 teaspoons rice vinegar
- 2 tablespoons sesame oil
- 1 teaspoon dry mustard
Classic Fish Sticks & Quickie Tartar Sauce

Fish Sticks 1. Preheat oven to 450 degrees
- Fish Sticks
- 1/2 cup flour
- Salt & freshly ground pepper
- 3 eggs
- 2 cups plain panko breadcrumbs
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh thyme (or 1 1/2 teaspoon dried thyme)
- 1 tablespoon chopped fresh oregano (or 1 1/2 teaspoons dried oregano)
- Zest of 1 lemon
- Old Bay seasoning, to taste (optional)
- 1 1/2 lbs firm white fish filet such as tilapia or cod
- Tartar Sauce
- 1/2 cup mayonnaise
- 1 tablespoon sweet relish
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dijon mustard
- Juice of 1/2 a lemon
- Salt
- Hearty quirt of sriracha (optional)
Mexican Chicken

- Vegetable oil cooking spray
- 1 (10 3/4-ounce) can cream of chicken soup
- 1 (10 3/4-ounce) can cheddar cheese soup
- 1 (10 3/4-ounce) can cream of mushroom soup
- 1 (10-ounce) can tomatoes
- 1 whole chicken, cooked, boned, and chopped or 4 cups leftover cooked chicken
- Unsalted butter, for greasing pan
- 1 (11 1/2-ounce) package flour tortillas
- 2 cups shredded Cheddar

- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. sugar
- 3/4 tsp. salt
- 1 stick + 2 tbsp. butter

Cheese Crescent Triangles

1. Heat oven to 375°F. In small bowl, mix feta cheese, green onions and 3 tablespoons of the beaten egg
- 4 oz tomato-basil feta cheese, finely crumbled (1 cup)
- 2 tablespoons finely chopped green onions (2 medium)
- 1 egg, well beaten
- 1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls or 1 can (8 oz) Pillsbury® Crescent Recipe Creations® refrigerated seamless dough sheet
- 1 tablespoon grated Parmesan cheese

- 1 cup homemade or store-bought mayonnaise
- 1/2 cup Dijon mustard
- 2 tablespoons agave syrup
- 1 teaspoon ground cinnamon
- 1/2 teaspoon beer extract
- Pinch cayenne pepper

- 2 large Vidalia onions
- 2 cups low-fat buttermilk
- 3 1/2 cups all-purpose flour, divided
- 1 cup rice flour
- 4 cups soda water
- One 16-ounce bottle of beer
