Chicken in White Wine

Heat nonstick Dutch oven over medium-high heat
- 3 slices turkey bacon, chopped
- 1 (3 1/2-pound) chicken, cut into 8 pieces and skinned
- 1 onion, chopped
- 2 celery stalks, sliced
- 1 head garlic, cloves peeled
- 1 tablespoon tomato paste
- 1/2 pound cremini mushrooms, sliced
- 1 cup frozen small onions
- 1 (14 1/2-ounce) can reduced-sodium chicken broth
- 1/2 cup dry white wine or dry vermouth
- 1/2 pound small red potatoes, scrubbed and quartered
- 4 carrots, cut into 2-inch lengths
- 2 tablespoons all-purpose flour
- 2 tablespoons water
- 2 tablespoons chopped fresh parsley
Creamy Mushroom Ragu with Pappardelle

Bring a large pot of water to a boil for the pasta
- 1 1/2 cups chicken stock or Imagine Vegetarian No-Chicken Broth
- 1-oz. package or a fat handful dried porcini mushrooms
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 pound fresh cremini mushrooms, thinly sliced
- 2 tablespoons fresh thyme leaves, chopped
- 1 onion, finely chopped
- 2 leafy ribs celery from the heart, very thinly sliced
- 4 cloves garlic, chopped
- 1/2 teaspoon crushed red pepper
- Salt and pepper
- 1 tablespoon tomato paste
- 1/2 cup marsala
- 1/2 cup heavy whipping cream
- 1/8 About 1/8 tsp. freshly grated or ground nutmeg
- 1 pound pappardelle
- 1/2 cup freshly grated Parmigiano-Reggiano, plus more for passing at the table
5 Minute Chocolate Mug Cake

Add dry ingredients to mug, and mix well
- 4 tablespoons flour
- 4 tablespoons sugar
- 2 tablespoons cocoa
- 1 egg
- 3 tablespoons milk
- 3 tablespoons oil
- 3 tablespoons chocolate chips (optional)
- A small splash of vanilla extract
- 1 large coffee mug (MicroSafe)
Zesty Orange Chocolate Energy Bars

Add 1/2 teaspoon cinnamon and/or a pinch of chili powder to give these snacks a touch of heat
- 1 cup cashews or almonds
- 3/4 cup pitted Medjool dates
- 1/4 cup raw cacao powder or unsweetened cocoa
- Pinch of salt
- 1 teaspoon vanilla extract
- 1 tablespoon grated orange zest
- 2 tablespoons cacao nibs
- Shredded coconut or additional orange zest, for dusting
Simple Spinach Lasagna

- 1 tablespoon extra virgin olive oil
- 2 (10 ounce) packages frozen chopped spinach
- 1/2 onion, chopped
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 2 cloves garlic, crushed
- 1 (32 ounce) jar spaghetti sauce
- 1 1/2 cups water
- 2 cups non-fat cottage cheese
- 1 (8 ounce) package part skim mozzarella cheese, shredded
- 1/4 cup grated Parmesan cheese
- 1/2 cup chopped fresh parsley
- 1 teaspoon salt
- 1/8 teaspoon black pepper
- 1 egg

Red Velvet Crackle Sandwich Cookies

- 3 ounces semisweet baking chocolate, chopped
- 1/4 cup unsalted butter
- 1 cup granulated sugar
- 2 large eggs
- 1 tablespoon red liquid food coloring
- 2 cups all-purpose flour
- 2 tablespoons unsweetened cocoa
- 1 teaspoon baking powder

Cuban-Style Black Beans

- 1 pound dried black beans, picked through, rinsed
- 1 bay leaf
- 1 medium onion, finely chopped, divided
- 1 green bell pepper, seeds and ribs removed, finely chopped, divided
- 8 garlic cloves, finely grated, divided
- 5 teaspoons Diamond Crystal or 1 tablespoon Morton kosher salt, plus more
- 1 teaspoon dried Mexican or Italian oregano, divided
- 1/4 cup extra-virgin olive oil
- Freshly ground black pepper
- Cilantro leaves with tender stems (for serving; optional)
Southwest Shrimp Tacos

- 10 to 12 (10-inch) wooden skewers
- 2 pounds unpeeled, large raw shrimp (21/25 count)
- Vegetable cooking spray
- 2 tablespoons hot sauce
- 1 tablespoon olive oil
- 1 1/2 teaspoons ancho chile powder
