One-Pot Pork with Apple Cider & Potatoes

Preheat the oven to 400 degrees
- 1 large onion, thinly sliced
- 1 1/2 pounds russet or Yukon Gold potatoes, peeled and thinly sliced
- 2 cups apple cider
- 2 thick (1-inch) pork chops (1 1/2 lbs. total)
- 1/3 cup flat-leaf parsley leaves and tender stems, chopped
- 3 sprigs rosemary
Linguine with Spinach-Herb Pesto

- 1/4 cup slivered blanched almonds
- 1/4 cup fresh basil leaves
- 2 teaspoons chopped fresh oregano
- 1 teaspoon chopped fresh thyme

- 1 large garlic clove, chopped
- 2 tablespoons organic vegetable broth
- 2 teaspoons fresh lemon juice
- 1/4 teaspoon salt
- 2 tablespoons extra-virgin olive oil
- 1 ounce Parmigiano-Reggiano cheese, grated and divided (about 1/4 cup)

New Orleans BBQ Shrimp

Preheat the oven to 350 degrees
- 2 sticks butter
- 1/2 Bottle Italian Dressing (16 ounce)
- Juice of Four Lemons
- 2-3 Pounds Uncooked Shrimp, peels and tails intact
- 1 t cayenne pepper
- 1 t freshly ground black pepper
- 1/2 t kosher salt
- 1/2 t crushed red pepper
- 1/2 t dried thyme
- Good French or Italian Bread for Soaking up the Sauce
Lemon and Garlic Roast Chicken

Preheat the oven to 425 degrees F
- 1 (5 to 6-pound) roasting chicken
- Kosher salt
- Freshly ground black pepper
- 1 large bunch fresh thyme
- 4 lemons
- 3 heads garlic, cut in 1/2 crosswise
- 2 tablespoons butter, melted
- 1/2 pound sliced bacon
- 1 cup white wine
- 1/2 cup chicken stock

- 2/3 cup nonfat dry milk
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 dash ground allspice
- 1/4 cup raisins
- 1 cup unsweetened applesauce
- 3 tablespoons sugar
- 1 teaspoon vanilla extract
- 3/4 teaspoon almond extract
- (You could also add dried fruit to your liking)

Preheat the oven to 425 degrees F and position a rack in the middle
- 5 tablespoons unsalted butter, plus more for the pan
- 3/4 cup all-purpose flour
- 3/4 cup yellow cornmeal
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1 cup buttermilk (shake before measuring)

Spring Onion Chicken & Rice Pilaf with Almonds

Heat a saucepan with a lid over medium to medium-high
- 1/3 cup (a fat handful) sliced almonds with skins
- 3 tablespoons butter
- A small handful (about 1/8 lb.) thin spaghetti, broken into 1- to 2-inch pieces
- 1 cup American basmati rice
- Salt and pepper
- 2 - 2 1/2 cups chicken stock
- 4 boneless, skinless chicken breasts (about 1 1/2 lbs. total), lightly pounded
- Salt and pepper
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 bunch spring onions or scallions, chopped, whites and greens separated
- 2 tablespoons chopped thyme
- 2 large cloves garlic, chopped
- 2 tablespoons flour
- 1/2 cup dry white wine
- 1 cup chicken stock
- 1 small lemon, juiced (about 3 tbsp.)
Honey-Orange-Ginger Cookies
