Spinach Patties

Spinach patties are basically rice, cheese, and spinach
- 2 cups rice
- 4 cups water
- salt
- 2 eggs
- 1 bag (about 2 cups) of shredded / grated cheese of your choice - I use Sharp Cheddar
- (You know those ziploc bags of shredded cheese? One of those.)
- 1 bag fresh spinach (10 oz is fine - or more if you want)
- Oil of your choice for frying
Cabbage and Apple "Slaw"

A quick-cooked "slaw" made of cabbage and apples
- 1/2 head cabbage
- 1 or 2 apples (skin on)
- 2 - 3 Tbsp BUTTER (margerine if you must)
- 2 - 3 Tbsp Brown sugar
- 1/3 - 1/2 cup apple cider vinegar OR 1/4 cup cider vinegar and 1/3 apple cider (if you don't want it too tangy)
- salt
Chocolate Pumpkin Pie

It sounds strange, but boy is it good!
- One pie crust - pastry, graham, or even - gasp! - store bought! Have it in the dish and ready to go.
- 1 can (15 oz) of pumpkin pie filling
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1/4 cup unsweetened cocoa powder
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 ground allspice (optional)
- 1/4 - 1/2 tsp ground nutmeg (I'll be honest, I love nutmeg, so... Also, I grate mine right into the bowl, so I have no idea how much I used. Bad baker!)
- 1/2 tsp salt
- 1 tsp vanilla extract
- 3 eggs
- 2/3 to 1 cup milk (I used 1% which was fine)
