Berry Compote

I was trying to think of something a bit different to use in place of strawberries in strawberry shortcake
- 1 12 oz package of Raspberries
- 1 12 oz package of Blackberries
- 1 11 oz package of Blueberries
- 1 16 oz package of Strawberries
- 1/2 or 5 ozs of a bottle of Martinelli's Blood Orange Juice
- (I have only seen this one time at my local market so maybe its new. I'm sure any acidic juice will work just fine)
- 1/2 C (Approx according to taste) of sugar
GLAZED FRUIT SALAD

- 1 pkg Vanilla Instant Pudding
- 1 cup cold orange juice
- 2 nectarines, chopped
- 2 cups halved fresh strawberries
- 2 cups cantaloupe chunks (1 inch)
- 2 cups seedless watermelon chunks (1 inch)
- 1 cup blueberries
- 1 cup seedless green grapes
Cinnamon Sugar Flour Tortilla Crisps

1 Cut each flour tortilla into 6 to 8 wedges or use a cookie cutter to cut out shapes in the tortillas
- 1/4 cup sugar
- 1 1/2 teaspoons cinnamon
- 4 Tbsp butter, melted
- 2 flour tortillas
Sesame Cucumber Salad

Combine first four ingredients in a small bowl or cup and whisk until emulsified
- 3 tablespoons toasted sesame oil
- 1 1/2 teaspoons tamari or soy sauce
- 1 1/2 teaspoons citrus juice (lemon, lime or orange)
- 1 teaspoon rice wine vinegar
- 1 to 1-1/2 Lbs. Cucumber, ends discarded, peeled if desired, sliced as thin as possible
- 2 tablespoons total chopped herbs (basil, cilantro and/or chives)
- 1 teaspoon toasted sesame seeds
JUST PEACHY WHITE WINE SANGRIA

Combine wine, schnapps, & fruit in a pitcher
- Suggestions:
- 1 bottle of white (or peach) wine
- 1/2 c Peach schnapps
- 1/4 - 1/2 c Sugar
- 2 Peaches, sliced (frozen or fresh)
- 1 Orange, sliced or cut into wedges)
- 1/2 a liter of Ginger Ale
- Moscato win works well
- Add 1 can of peach nectar
- Add 1 can of Mandarin Oranges
- Add Strawberries, sliced (fresh or frozen)
- Add Raspberries, fresh or frozen

- 6 T Butter
- 2 T Maple Syrup
- Cinnamon to taste
- Salt to taste
Ciabatta Bread

This recipe has the dough made in the Bread Machine but you could make it by hand if you prefer
- 1 1/2 c Water
- 1 1/2 t Salt
- 1 t Sugar
- 1 T Olive Oil
- 3 1/4 c All Purpose or Bread Flour
- 1 1/2 t Active Dry Yeast
CREAMY MAC & CHEESE

- 2 C Elbow Macaroni, uncooked
- 4 T Butter or Margarine
- 2 1/2 C Shredded Cheese (I use a blend of cheeses. Any cheese you like will work)
- 3 Eggs, beaten
- 1/2 C Sour Cream
- 1 can Condensed Cheddar Cheese Soup
- 1/2 t Salt
- 1 C Whole Milk
- 1/2 t Dry Mustard
- 1/2 t Black Pepper

This is a recipe to make the dough in the Bread Machine and do the rest in the oven
- 2 cups AP or Bread Flour
- 1 1/2 cups Potato Flakes
- 2 1/2 t Salt
- 4 1/2 t Yeast
- 1 1/2 cups Warm Water
- 1 1/4 cups Warm Milk
- 1/4 cup Margarine
- 1/4 cup Honey
- 2 Eggs, beaten
- 2 1/2 cups Wheat Flour
Pineapple Upside-Down Cake

- Heat oven to 350°F. Pour melted butter into a 9x13 pan
- Â1/4 c Butter or Margarine, melted
- â c Brown Sugar
- 1 14oz can Pineapple Slices in juice, drained, reserve juice
- Â1/4 c Light Rum, Optional
- Maraschino cherries without stems
- 1 â c All Purpose or Cake Flour
- 1 c Sugar
- â c Shortening
- 1 Â1/2 t Baking Powder
- Â1/2 t Salt
- Â3/4 c Milk
- 1 Egg
