Autumn Salad

Sprinkle lemon juice on the apples
- 1 medium Granny Apple, thinly sliced (with Skin)
- 2 tablespoons lemon juice
- 1 bag (about 5 cups) mixed lettuce (or Your favorite lettuce)
- 1/4 cup walnuts, chopped
- 1/2 cup unsalted sunflower seeds
- 1/3 cup low fat rasperry vinaigrette dressing
Apple Cider Vinaigrette

In a small bowl, whisk together all the ingredients until well combined
- Unfiltered apple cider vinegar is so good for you in so many ways-from stimulating your circulation to clearing up breakouts. It is also adds a slightly sweet tang to any dressing. I love it paired with a bit of mustard and honey-delish.
- 1/4 cup unfiltered apple cider vinegar
- 2 tablespoons extra-virgin olive oil
- 1/4 teaspoon sea salt
- 1 tablespoon dijon mustard
- 1 teaspoon manuka honey or maple syrup
GRILLED CHICKEN LETTUCE CUPS WITH FRESH HERBS & CHILES

Preheat grill or grill pan over medium-high heat
- 6 chicken thighs (skin-on, boneless, pounded 1/4-inch thick)
- 2 tablespoons olive oil
- 1 clove garlic (minced or finely grated)
- 1 (2-inch) piece ginger (minced, about 2 tablespoons)
- 1 (2-inch) piece lemongrass (minced, about 2 tablespoons)
- 1/4 cup scallions (thinly sliced)
- 2 tablespoons red onion (finely chopped)
- 1 cup cilantro (whole leaves)
- 1 cup mint (whole leaves)
- 1 serrano chili (thinly sliced)
- 1 lime (juice)
- 2 teaspoons rice wine vinegar
- 2 teaspoons honey
- 1 head Bibb lettuce (leaves cleaned and separated, to serve)
- 2 cups white jasmine rice (cooked, to serve)
- salt and freshly ground black pepper (to taste)
Honey-Ginger Chicken with Lime

- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1/3 cup minced fresh ginger
- 1 jalapeño, finely chopped
- 2 teaspoons garam masala
- 1 1/2-teaspoons ground coriander
- 1 teaspoon ground cumin
- 1/2-teaspoon cayenne
- 1 tablespoon plus 1 teaspoon salt
- 1 teaspoon cracked black pepper
- 3 1/2-teaspoons grated lime zest
- 4 chicken legs, cut into drumsticks and thighs
- 2 teaspoons sugar
- 4 tablespoons unsalted butter

Rustic Autumn Fruit Tart

In a small bowl, beat butter and cream cheese until smooth
- 1/2 cup butter, softened
- 4 ounces cream cheese, softened
- 1-1/2 cups all-purpose flour
- 2 large apples, peeled and thinly sliced
- 1 medium pear, peeled and thinly sliced
- 4-1/2 teaspoons cornstarch
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon ground nutmeg
- 1/4 cup orange juice
- 1/3 cup packed brown sugar
- 1/2 cup apricot jam, warmed
Mac And Cheese

- 8 ounces elbow macaroni

- 2 cups heavy cream
- 8 ounces sharp Cheddar cheese, shredded (about 1 cup)
- 6 ounces pepper Jack cheese, shredded (about 2/3 cup)
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 tablespoon salt, or more to taste
- 1 teaspoon freshly ground black pepper, or more to taste

In a blender (or in a tall jar using an immersion blender) Whisk together Greek yogurt and mayonnaise
- 3/4 cup plain Greek yogurt, plain or low fat
- 2 tablespoons mayonnaise
- 1 small clove garlic, peeled
- 1 tablespoon lemon juice1 tablespoon white wine vinegar
- 1/4 cup minced chives
- 1/4 cup chopped parsley
- 2 tablespoons chopped tarragon
- Freshly ground pepper
