Two-Color Ziti Fake-Bake

Bring a large pot of water to a boil, salt it, add the pasta and cook until al dente
- Salt and pepper
- 3/4 pound ziti rigate, whole wheat ziti or any other short-cut pasta
- 3 1/2 tablespoons extra-virgin olive oil (EVOO)
- 4 cloves garlic, grated or finely chopped
- 1 bunch cavolo nero (also called tuscan kale, dinosaur kale or lacinato kale), stemmed and very thinly sliced Freshly grated nutmeg, to taste
- 1 cup fresh ricotta or sheep’s-milk ricotta cheese
- 1/4 About 1/4 cup grated onion
- One 28-ounce can italian tomatoes in puree
- A few leaves fresh basil, torn
- Freshly grated parmigiano-reggiano cheese
- 8 ounces thinly sliced fresh mozzarella or shredded mozzarella cheese
Chicken with Tomatoes, Apricots, and Chickpeas

1. Rinse chicken breasts, pat dry, and sprinkle all over with salt and pepper
- 4 boned, skinned chicken breast halves (about 2 lbs. total)
- Kosher salt
- freshly ground black pepper
- 1 tablespoon olive oil
- 2 teaspoons ground cumin
- 1 1/2 teaspoons ground coriander
- 1/4 teaspoon cayenne
- 1 can (14.5 oz.) diced tomatoes
- 1/3 cup chopped dried apricots
- 1 tablespoon sugar
- 3 garlic cloves, minced
- 1 can (15.5 oz.) chickpeas (garbanzos), drained and rinsed

Heat a medium soup pot over medium-low heat
- 3 tablespoons extra-virgin olive oil (EVOO), 3 turns of the pan, plus more for drizzling
- 4 to 6 garlic cloves, finely chopped
- 1 medium to large onion, finely chopped
- One 14.5-ounce can petite diced tomatoes
- One 28-ounce can crushed tomatoes
- Salt and freshly ground pepper
- 1 quart chicken broth
- 4 cups chopped or torn day-old Italian bread (about ½ pound)
- Two 15.5-ounce cans small white beans, such as Goya brand
- 1/2 cup freshly grated Parmigiano-Reggiano cheese (2 generous handfuls), plus more to pass around the table
- 10 leaves fresh basil, torn (optional)
