- 1/4 teaspoon salt

- 1/2 cup olive oil
- 1/4 cup chopped fresh parsley
- 4 garlic cloves, minced
- Sea salt
- Freshly ground pepper
Fresh Herb Yogurt Dip with Sliced Pears

Line a sieve with a coffee filter or double thickness of cheesecloth
- 3 cups plain regular yogurt
- 2 tbsp chopped fresh tarragon
- 2 tbsp chopped fresh chives
- 1 tbsp choped fresh dill (optional)
- 1 tbsp sherry vinegar
- Freshly ground pepper
- Dash of allspice
- 6 fresh pears, any variety or a mix, sliced
- Honey (optional)
Plum-and-Peach Ginger Crisp

Preheat oven to 375 F. In large bowl, combine plums and peaches
- 2 lb plums, pitted, cut into 1/2-inch thick slices
- 3/4 lb ripe peaches, peeled, pitted, cut into 1/4-inch thick slices
- 1/2 cup granulated sugar
- 4 gingersnap cookies, finely crushed
- 1/2 tsp grated orange zest
- 1/2 cup unsifted all-purpose flour
- 1/2 tsp ground cinnamon
- 1/8 tsp salt
- 1/4 cup packed light brown sugar
- 4 tbsp (1/2 stick) cold unsalted butter, cut into small pieces
- 1 tbsp minced crystallized ginger
- 1/2 cup chopped pecans
- Whipped cream
Cranberry Cocktail Sauce

A nice change from run-of-the-mill cocktail sauce, this fruity stand-in is perfect with shrimp or turkey
- 1 ½ cups fresh cranberries
- 1 ⁄4 cup tomato ketchup
- 1 ⁄4 cup raspberry preserves
- 1 1⁄2 teaspoons hot sauce, or to taste
- 1 (1⁄4-inch thick) slice of a large onion
- 1 tablespoon prepared horseradish
- 2 tablespoons honey
Huckleberry Pie

Measure ingredients into a two quart mixing bowl and mix well
- 3 cups fresh or frozen huckleberries
- 1 cup sugar (scant)
- 1/2 tsp almond extract
- 1 pastry for double crust pie
- 1 cup grated apple
- 2 tbsp flour
- Dash of salt
Baked Zucchini

Preheat oven to 350 F. Sauté onions and celery in margarine
- 6 medium zucchini
- 1/2 onion, chopped
- 1/4 cup chopped parsley
- 4 celery stalks, chopped
- 2 tbsp margarine
- 1 1/2 cups low-fat cottage cheese
- 1/3 cup buttermilk
- 2 eggs, beaten
- 1/2 tsp salt
- 1/8 tsp pepper
- 1 tsp oregano
- 1/2 cup grated cheddar cheese or 1/4 cup grated Parmesan cheese
- Whole wheat bread crumbs, optional
- Dash garlic powder, optional
Peanut Butter Balls

Combine peanut butter, powdered dry milk and honey, roll into balls and store in refrigerator
- If desired:
- 1/2 cup peanut butter
- 3 1/2 tbsp powdered dry milk
- A bit of honey
- Raisins
