Cranberry Sauce

In a medium pot, combine the cranberries, sugar and water
- 1 pound fresh cranberries, washed and dried
- 1 cup granulated sugar, more to taste (up to 1 1/2 cups total)
- 1/3 cup water
- 1 cinnamon stick

- 1/4 teaspoon ground nutmeg
- 1 orange, zested and juiced

- 2 tablespoons olive oil
- 1 garlic clove, crushed
- 1 (28-ounce) can tomato puree
- 1 teaspoon dried marjoram
- 1 teaspoon dried basil
- Salt and fresh ground pepper, to taste

- NOTE: Recipe is enough for 3 12-inch pizzas.

- 1 (4 to 5-pound) prime boneless beef chuck roast, tied
