Nothing but Delicious: Deep Dish

Every Sunday I make two pizza doughs
- makes 2 10"-12" pizzas
- 3 1/3 cups flour*
- 1 1/3 cups warm water*
- 1 packet active dry yeast
- 2 T melted salted butter, plus extra for greasing pan
- 1 t kosher salt
- 1 oz goat cheese at room temp (optional)

Instructions Preheat the oven to 350 degrees
- 2 1/2 cup old fashioned oats
- 1 cup all-purpose flour
- 1 cup white whole wheat flour or whole wheat pastry flour
- 1 cup brown sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup coconut oil, melted (if need you may sub canola oil)
- 2 eggs
- 1 tablespoon vanilla
- 8 ounces dark chocolate, chopped into chunks (about 1 1/2 cups)

Melt 1 tablespoon butter in heavy medium skillet over medium-high heat
- 4 tablespoons (1/2 stick) chilled butter
- 3 garlic cloves, chopped
- 1 large shallot, chopped
- 1 tablespoon chopped fresh thyme
- 3/4 cup low-salt beef broth
- 1/2 cup dry red wine
- 1/2 cup coarsely crumbled Maytag blue cheese (about 2 ounces)
- 1/4 cup panko (Japanese breadcrumbs)*
- 1 tablespoon chopped fresh parsley
- 4 1-inch-thick filet mignon steaks (each 6 to 8 ounces)

- 1/2 cup warm water (100° to 120°F)
- 1-1/2 cups all-purpose flour
- 1/2 tsp. salt
- Olive oil for greasing the mixing bowl
- 1/4 lb. sliced smoked bacon or pancetta (about five 1/4-inch-thick slices), cut in 1/2-inch pieces
- Olive oil for brushing the dough
- 1/4 cup thinly sliced scallions (white and light green parts)
- 4 oz. coarsely grated Gruyère cheese
