Broccoli Cheese Soup

Cream and shredded Cheddar cheese make this broccoli cheese soup a perfect supper for a weeknight
- 4 tablespoons butter, room temperature
- 1 1/2 pounds fresh broccoli
- 1 large onion, chopped
- 1 carrot, sliced
- Salt and freshly ground black pepper
- 3 tablespoons all-purpose flour
- 4 cups low-sodium chicken broth
- 1/2 cup cream, or 1 cup of milk
- 1 cup shredded cheddar cheese
Tiramisu Pie

Recipe is for a tiramisu mousse but I decided to put it in a pie instead of serving it in cups or a bowl
- 1 1/2 teaspoons instant coffee
- 1/4 cup hot water
- 1 cup heavy whipping cream, cold
- 1 1/2 cups powdered sugar
- 8 ounces marscarpone cheese or cream cheese (low fat cream cheese is fine)
- 1 teaspoon vanilla extract
- 1 tablespoon unsweetened cocoa powder
- 9 in. ready to go graham cracker crust
- Mini semi-sweet baking chocolate chips (I buy the bag and add as much as I like)
Chocolate Chip Graham Cracker Blondies

Preheat oven to 350 degrees, and butter a 13 x 9 pan
- 2 sticks (16 Tbsp.) butter, melted
- 2 cups brown sugar (I used light brown sugar)
- 2 large eggs
- 2 tsp. vanilla
- pinch salt
- 2 cups all-purpose flour
- 1/2 tsp. baking powder (this is not in the original recipe and you would be fine without it)
- 1 cup chocolate chips (I used a combination of milk and semi-sweet)
- approx. 2/3 to 3/4 cup graham cracker crumbs (I crushed my own; they were coarsely crushed)
Cheesecake Cups (from Mom)

Usually used as a Thanksgiving dessert
- 2 eggs
- 2 pks softened cream cheese
- 1/2 cup sugar
- 1/2 teaspoon vanilla
- 1 can of cherries
- Box of vanilla wafers or crushed graham crackers
- (If using crushed graham crackers, must add a little butter & sugar so it can be a firm base.)
Chicken Pot Pie

Preheat oven to 425 degrees F (220 degrees C)
- 1 recipe pastry for a 9 inch double crust pie
- 1 carrot, chopped
- 1 head fresh broccoli, chopped
- 2 boneless chicken breast halves, cooked and chopped
- 1 (10.75 ounce) can condensed cream of chicken soup (or chicken broth)
- 2/3 cup milk
- 1 cup shredded Cheddar cheese
- 1/2 teaspoon salt
Chicken and Broccoli Pies

1 Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray
- Chicken Broccoli Mixture
- 1 tablespoon vegetable oil
- 1 lb boneless skinless chicken breasts, cut into bite-size pieces
- 1 medium onion, chopped (1/2 cup)
- 1 cup Green Giant™ frozen chopped broccoli, thawed and drained
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup shredded Cheddar cheese (4 oz)
- Baking Mixture
- 1/2 cup Original Bisquick™ mix
- 1/2 cup milk
- 2 eggs
Zucchini Bread

- 2 C grated Zucchini
- 2 C Sugar
- 1 C Oil
- 1/4 t. Pepper
- 1 T. Salt
- 2 t Baking Soda
- 2 t. Cinnamon

Italian Lemon Cookies

Cream sugar and Crisco. Add eggs, then add flour and baking powder
- Icing:
- 2 tsp. vanilla
- 1 cup Crisco
- 6 eggs
- 1 cup sugar
- 6 tsp. baking powder
- 4 cups flour
- 2 cups confectioner's sugar (approximately)
- lemon extract (try 1 1/2 tsp. per batch)
- hot water
Russian Tea Cookies (Christmas)

Old family recipe from Aunt Betty
- 1 cup (2 sticks of Land O Lakes Margarine- 1/2 a pound)
- 2 1/4 cups sifted flour
- 1 tsp. vanilla
- 1/2 cup confectioner's sugar (plus extra for the coating of the cookies)
- 1/2 tsp. salt
- 3/4 cup finely chopped walnuts, or to your liking but you will see that they can't be too big otherwise they won't stay in the dough
