Seafood Seasoning

Add all ingredients to food processor or spice grinder and pulse until evenly ground
- 1 tbsp onion powder
- 1 tbsp salt
- 1 tbsp thyme
- 2 tsp paprika
- 1 tsp cracked black pepper
- 1/4 tsp cracked white pepper
- 1/2 tsp rubbed sage
- 1/4 tsp rosemary
- 1 tsp Ancho or Pasilla pepper
Pimento Cheese

I’ve seen people almost get into fistfights over who has a better pimento cheese recipe
- 3 large pimento peppers (about 12 oz.)
- 4 oz. cream cheese, at room temperature
- 1/2 cup mayonnaise, preferably Duke’s
- 1/2 tsp. vinegar-based hot sauce, such as Tabasco
- 1/2 tsp. kosher salt
- 1/4 tsp. sugar
- 1/8 tsp. cayenne pepper
- 1/8 tsp. freshly ground white pepper
- 1/8 tsp. smoked paprika
- 1/4 cup pickled ramps, chopped, plus 1/2 cup of the brine (if you can't find ramps, you can substitute finely chopped bread-and-butter pickles and brine)
- 1 lb. sharp cheddar cheese, grated on the large holes of a box grater
Smashed Potatoes with Roasted-Garlic Gravy

- 1 large head garlic
- 2 tablespoons olive oil plus additional for drizzling
- 1 leek, quartered and washed
- 1 onion, left unpeeled, quartered
- 2 carrots, quartered
- 1 parsnip, quartered
- 2 celery ribs, quartered
- 1 Turkish or 1/2 California bay leaf
- 1/2 teaspoon black peppercorns
- 1 1/2 cups dry white wine
- 1/3 cup soy sauce
- 6 cups cold water
- 4 pounds boiling potatoes
- 3 tablespoons unsalted butter, cut into pieces
- 3 tablespoons extra-virgin olive oil
- 5 tablespoons unsalted butter
- 1/3 cup all-purpose flour
Crab Dip

Basic recipe for shrimp or crab butter
- 8 oz. cream cheese
- 1 stick butter
- 1 clove garlic, minced
- 1 medium onion, finely chopped
- 2 tab prepared horseradish
- 1 tsp Worcestershire sauce
- 1/2 to 1 pound crab meat or chopped shrimp
- 1 tsp sherry
- 1 tsp Old Bay seasoning
Pickled Carrots and Daikon

- 2 c water
- 1 c sugar
- 1 c rice vinegar
- 2 tsp salt

- 1/2 c sugar
- 1 sm (15 oz) can crushed tomatoes
- 1 tbsp dried parsley
- 2 tsp pickling spice
- 6 cloves, whole
- dash, cayenne pepper
- salt and pepper to taste
- 1/4 c butter
- 1/8 c flour
