Stuffed Zucchini Recipe

In a large bowl, combine first 11 ingredients and one can of the tomato sauce; mix well

- 1 large onion, chopped
- 1 large green pepper, chopped
- 1 jalapeno pepper, minced
- 1-1/4 cups soft bread crumbs
- 1 egg, beaten
- 1 tablespoon dried parsley flakes
- 1 teaspoon dried basil
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 2 cans (8 ounces each) tomato sauce, divided
- 2 medium tomatoes, coarsely chopped
- 4 to 5 medium zucchini
- 2 cups (8 ounces) shredded mozzarella cheese
SAVORY BEER PORK CHOPS

Sprinkle both sides of pork chops with salt and pepper
- 4 boneless pork loin chops (4 ounces each)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 tablespoon canola oil
- 3/4 cup beer or nonalcoholic beer
- 3 tablespoons ketchup
- 2 tablespoons brown sugar

- 1 (10 oz.) spinach (can kind works fine)
- 1 can artichoke hearts

In large kettle, combine meatballs, tomatoes, potatoes (with the liquid), and all remaining ingredients
- 1 -recipe meatballs (see recipe under “beef”)
- 1 - 16 oz. can tomatoes, cut up
- 1 – 16 oz. can sliced potatoes
- 1 small pkg. mixed vegetables (frozen)
- 1 – 2 tsp. chili powder
- 1-cup water
- 1 beef bouillon cube or 2 tsp. instant beef bouillon
- Green onion, chopped to taste
TOMATO & GOUDA GRILLED CHEESE SANDWICH

In a large saute pan over medium-high heat, add the oil and swirl to coat
- 1 medium vine-riped tomato, cut into 1/4-inch-thick slices
- 3 ounces Gouda cheese
- 1 Tbsp extra-virgin olive oil, plus more for brushing the bread

- 1 cup oil
- 2 cups sugar
- 3 cups grated zucchini
- 3 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 3 tsp cinnamon
- 1/2 tsp nutmeg
- ¼ tsp baking powder
- 3 tsp vanilla
- 1/2 cup chopped walnuts
BOURBON-SAUCED PORK CHOPS

In a small saucepan, combine bourbon, soy sauce, brown sugar, vinegar, garlic, ginger and pepper
- 1/3 cup bourbon or apple juice
- 3 Tbsps reduced-sodium soy sauce
- 3 Tbsps packed brown sugar
- 2 Tbsps cider vinegar
- 2 cloves garlic, thinly sliced
- 1/2 tsp grated fresh ginger
- 1/4 tsp ground black pepper
- 1 Tsp cold water
- 1/2 tsp cornstarch
- 4 1-1/2 inch thick bone-in pork chops
SALAMI PASTA SALAD

Cook pasta according to package directions; drain and rinse in cold water
- DRESSING:
- 2 cups uncooked small pasta shells
- 3/4 cup chopped fresh tomatoes
- 1/2 cup chopped pepperoni
- 1/2 cup cubed hard salami
- 1/2 cup whole ripe olives, quartered
- 2 ounces provolone cheese, cubed
- 1/3 cup chopped onion
- 1/3 cup canola oil
- 1/4 cup red wine vinegar
- 2 tablespoons sugar
- 1-1/2 teaspoons salt
- 1-1/2 teaspoons dried oregano
- 1/2 teaspoon pepper
POTATO WEDGES

- 3 Tbsps oil
- 1/2 tsp salt
