CHICKEN, TOMATO & CUCUMBER DINNER SALAD

- 5 Tbsp olive oil, divided
- 1 to 1/4 lb. chicken breast tenders
- Salt and freshly ground black pepper
- 1/4 cup cider or white wine vinegar
- 1 Tbsp snipped fresh thyme
- 1 tsp sugar
- 1 medium cucumber, cut in thin ribbons
- 2 tomatoes, sliced
- 1/2 cup pitted green olives, halved and/or sliced
- 4 oz. feta cheese (optional)

Mix together and serve with apples
- 1 - 8 oz Cream Cheese
- 3/4 cup brown sugar
- 1/4 cup white sugar
- 1 tsp. vanilla
- 1 cup chopped peanuts
SAVORY MUSHROOM CHICKEN

In large skillet, over medium-high heat, brown chicken in oil 4 minutes on each side
- 4 boneless, skinless chicken breast halves (about 1 pound)
- 2 Tbsps vegetable oil
- 10 oz. sliced mushrooms
- 2 cloves garlic, minced
- 1/2 cup Grey Poupon Dijon mustard
- 1/2 cup half and half or light cream
- Hot cooked egg noodles

Simmer about 20 minutes. Triple batch: 2 ½ cans sauce and 7 Tbsp
- Brown together and drain fat:
- 1 lb ground beef
- 1 medium onion (chopped)
- 1 clove of garlic
- The add: DO NOT DRAIN!
- 1 can cut tomatoes
- 1 (16 oz.) can tomato sauce
- 2 Tbsp. chili powder
- 2 Tbsp. cumin
- 1 can kidney beans
ICEBOX MACARONI SALAD

Cook macaroni according to package directions - do not chill
- 7 oz Creamettes macaroni (2 cups dry)
- 2 Tbsps salad oil
- 2 Tbsps vinegar
- 1 Tbsp minced onion
- 1/2 tsp seasoned salt
- 1/4 tsp seasoned pepper
- 1 cup diced cheddar cheese
- 1/2 cup mayonnaise
- 17-oz can of peas, drained
- 1 cup diced cooked ham
- 1 cup diced celery
ULTIMATE GRILLED CHEESE

In a mixing blow, beat cream cheese and mayonnaise until smooth
- 1 package (3 oz) cream cheese, softened
- 3/4 cup mayonnaise
- 1 cup (4 oz) shredded cheddar cheese
- 1 cup (4 oz) shredded mozzarella cheese
- 1/2 teaspoon garlic powder
- 1/8 teaspoon seasoned salt
- 10 slices Italian bread (1/2 inch thick)
- 2 tablespoons butter or margarine, softened
Roasted Asparagus

Preheat oven to 400 degrees
- 1 lb asparagus spears (thick spears are best for roasting)
- 1-2 Tbsp olive oil
- 2 cloves garlic, minced
- Kosher Salt
- Freshly grated black pepper
- Lemon juice (or balsamic vinegar)

- 1 jar marshmallow creme

- 1 cup uncooked elbow macaroni
- 2 bacon strips, chopped
- 1/4 cup chopped onion
- 1/4 cup sliced fresh mushrooms
- 1-1/2 teaspoons butter
- 1 tablespoon all-purpose flour
- 1/4 cup plus 2 tablespoons chicken broth
- 1/4 cup plus 2 tablespoons 2% milk
- 3/4 cup shredded pepper Jack cheese
- 1/4 teaspoon Italian seasoning
- Dash salt and pepper
CAPRESE PANINI

Heat oil in a nonstick skillet over medium-high heat
- 1 Tbsp olive oil
- 3/4 cup tomatoes, diced
- 1 Tbsp capers, drained
- Pinch of red pepper flakes
- 1/2 tsp balsamic vinegar
- 4 slices white or wheat bread 1/2 “ thick
- olive oil
- 1/4 cup purchased pesto
- 6 oz. fresh mozzarella, thinly sliced
- Sea salt and coarsely ground pepper to taste
