Make roux by cooking flour and oil in skillet, stirring constantly until it resembles melted chocolate

  • 1/3 cup flour
  • 1/3 cup vegetable oil
  • 3 cups chicken broth
  • 1 pkg andouille sausage sliced (any sausage will work)
  • 2 cups shredded or chopped chicken (can be cooked or uncooked)
  • 2 cups okra, fresh or you can thaw the frozen kind (optional) (ADD LAST HOUR)
  • 1 can Diced Tomatoes
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 cup bell pepper chopped
  • 1 tsp garlic minced
  • 1/4 tsp red pepper powder
  • salt and pepper to taste
  • Gumbo fi'le to taste
