Chicken Sausage Gumbo

Make roux by cooking flour and oil in skillet, stirring constantly until it resembles melted chocolate
- 1/3 cup flour
- 1/3 cup vegetable oil
- 3 cups chicken broth
- 1 pkg andouille sausage sliced (any sausage will work)
- 2 cups shredded or chopped chicken (can be cooked or uncooked)
- 2 cups okra, fresh or you can thaw the frozen kind (optional) (ADD LAST HOUR)
- 1 can Diced Tomatoes
- 1 cup chopped celery
- 1 cup chopped onion
- 1 cup bell pepper chopped
- 1 tsp garlic minced
- 1/4 tsp red pepper powder
- salt and pepper to taste
- Gumbo fi'le to taste
Bacon Wrapped Tenderloin

-Wrap tenderlion in bacon and pour italian dressing over tenderlion
- 1 or 2 pork tenderloins
- 1/2 bottle italian dressing
- slices of bacon
Crockpot Pizza Casseroll

Brown meat and onion. Drain grease and add sauces
- 1 1/2 lb ground beef
- 1 can (14oz) pizza sauce
- 1 package noodles
- 4 oz cheese, mozzarella
- 1 small can mushrooms
- I onion, diced
- 1 can (14 oz) spaghetti sauce
- 4 oz cheddar cheese
- 1 package pepperoni
- 1 green pepper diced
Cuban Style Pork and Sweet Potato Chili

Put everything in a 4- 5 quart crock pot except the lime juice and cilantro
- 1 large sweet potato (about 1 lb), peeled and cut into 1/2 inch dice
- 1 lb pork tenderloin, cut into 1 inch pieces
- 14.5 oz can of diced tomatoes (we like fire roasted or use low sodium)
- 1 small can of diced green chiles
- 1 garlic clove, minced
- 1/4 cup orange juice
- 2 medium scallion, chopped (green parts only)
- 1/2 tsp salt
- 1/4 tsp ground cumin
- 1/4 tsp black pepper
- 1 1/2 Tbs fresh lime juice
- 2 Tbs cilantro, fresh, chopped

- 1 1/2 teaspoons sugar
- 1 pound 1-inch-thick boneless pork loin chops, trimmed of any fat, and cut into 1-inch cubes
- 2 tablespoons pineapple juice
- 1 tablespoon ketchup
- 1/2 teaspoon white vinegar
- 3 tablespoons canola oil
- 1 red onion, peeled, trimmed and cut into 1-inch cubes
