Garlic-and-Rosemary Roast Pork Loin

1.In a small bowl, stir 1/4 cup of the olive oil with the garlic, rosemary, salt and pepper
- 1/4 cup plus 2 tablespoons extra-virgin olive oil
- 8 large garlic cloves, chopped
- 1 bunch of rosemary, leaves only, coarsely chopped (1/2 cup)
- 2 teaspoons kosher salt
- 1/2 teaspoon freshly ground pepper
- 2 pounds center-cut pork loin
Oven Roasted Cauliflower

Heat oven to 450 degrees F
- 1 medium head cauliflower (about 2-1/4 pounds), trimmed and cut
- into florets
- 3 large cloves garlic, thinly sliced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons grated Parmesan cheese
Orzo with Mushrooms, Scallions and Parmesan

1. In a medium saucepan, bring the chicken stock to a boil
- 16 ounces chicken stock (plus more as needed)
- 3/4 cup orzo pasta
- 2 tablespoons olive oil
- 8 ounces white button mushrooms, cleaned and quartered
- 1 1/2 teaspoons dried marjoram
- 1 bunch scallions, diced (include both white and green parts)
- 1/2 teaspoon salt
- 1/2 cup grated parmesan
Banana Bread

Preheat the oven to 325 degrees F
- 1 cup granulated sugar
- 8 tablespoons (1 stick) unsalted butter, room temperature
- 2 large eggs
- 3 ripe bananas
- 1 tablespoon milk
- 1 teaspoon ground cinnamon
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt

- 1 box Betty Crocker fudge brownies (for a 9x13 pan)
- 2 eggs
- 1/4 cup water
- 2/3 cup vegetable oil
- 3 cups pretzels
- 1 jar caramel sauce
- coarse sea salt
Fresh Snow Pea Salad with Pancetta & Pecorino

1. Soak the snow peas in ice water for 10 minutes
- 1 pound snow peas—strings removed, peas sliced on the diagonal 1/4 inch thick
- 1/4 cup plus 1 tablespoon extra-virgin olive oil
- 4 ounces thickly sliced pancetta, cut into 1/4-inch dice
- 1/2 small white onion, finely chopped
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon lemon oil (see Note)
- Kosher salt
- Freshly ground black pepper
- 1/2 cup mint leaves, torn
- 2 ounces shaved Pecorino Sardo cheese
Watermelon and Charred-Tomato Salad

Cut the tomatoes into 1/2-inch dice
- 4 plum tomatoes, halved lengthwise (or cherry tomatoes, cut in 1/2)
- 2 pounds seedless watermelon—rind removed, flesh cut into 1/2-inch dice
- 1 English cucumber—halved, seeded and cut into 1/2-inch dice
- 3 tablespoons fresh lime juice
- 1/2 teaspoon crushed red pepper
- 1/2 cup chopped cilantro
