Cheesy Bacon Brunch Casserole

Casserole can be assembled ahead of time
- 8 slices OSCAR MAYER Bacon (cut into 1-inch pieces)
- 2 cups hash browns (frozen shredded, thawed)
- ½ pound fresh mushrooms (coarsley chopped)
- 1 green bell pepper (chopped)
- 1 red bell pepper (chopped)
- 1 small onion (chopped)
- 12 eggs 12 eggs
- ⅓ cup KNUDSEN Sour Cream (or BREAK STO NE'S)
- ¾ pound VELVEETA® (cut into 1/2-inch cubes)
Oven-Fried Chicken

Soak chicken in buttermilk, at least 30 minutes or up to 12 hours
- Gravy:
- Soak: 2 each chicken breasts, thighs, drumsticks, and wings (breasts cut in half)
- 1 cup buttermilk
- 4 T. unsalted butter, melted
- Combine: 1 1/2 cups all purpose flour
- 1 T. kosher salt
- 1 T. paprika
- 1 T. black pepper
- 1 t. garlic powder
- 1 t. dried thyme
- 2 cups peanut oil
- 1/3 cup all purpose flour
- 2 1/2 cups chicken broth
- 1/2 t. cider vinegar
- 1/2 t. soy sauce
- salt and pepper to taste

- Sweat:
- 2 cups each sliced carrot, diced onion, diced fennel bulb, and diced Swiss chard stems
- 2 T. minced garlic
- 4 t. dried Italian seasoning
- 1/2 t. red pepper flakes
- 1/4 t. nutmeg
- 2 T. oil
- Deglaze:
- 1/2 cup Marsala
- 1 - 2 T. chicken base
- 12 cups low-sodium chicken broth
- Add:
- 4 cups chopped roasted turkey
- 3 cups refrigerated cheese-filled tortellini
- 8 cups chopped Swiss chard leaves, rinsed (1 bunch)
- 1 can red kidney beans, drained, rinsed (14.5 oz.)
- Stir in:
- 1 T. lemon juice
- salt and black pepper

- 1/4 cup blackberry preserves
- 3 tablespoons white wine vinegar, or champagne vinegar
- 2 tablespoons Dijon mustard
- 2 teaspoons chopped fresh thyme
- Kosher salt and freshly ground black pepper
- 1 (4 to 5-pound) boneless center-cut pork loin, trimmed
- 1 clove garlic, smashed
- 2 red onions, quartered
