- 3 Idaho potatoes
- 3/4 c shredded mozzarella
- 1/2 c shredded parmesan
- 1/2 --1 c milk
- 1/2 stick butter
- grated onion
Apple Fritters

make batter at least an hour before required, using following methos: sift together flour and salt
- 5 oz flour
- 5 oz water
- 1/4 tsp salt
- 2 eggs separated
- 1 T melted butter
- 2 large cooking apples
- 4 oz sugar
- lemon juice
- oil for frying
Scallops Coquille

- 2/3 c dry white wine
- 1/3 c water
- 1 small onion, cut in half
- 1 lb scallops
- 3 T butter or margarine
- 1/4 lb mushrooms, chopped
- 2 T flour
- pepper
- 1 can cream of mushroom soup
- 1/2 c heavy cream
- 2 T lemon juice
- 2 T melted butter
- 1/4 c Parmesan cheese
- 1/2 c bread crumbs
California Broccoli Salad

- 4 c broccoli trimmed, cut up fresh
- 1/2 lb bacon cut in 1" pieces and fried crisp
- 1 c sliced fresh mushrooms
- 1 3.75 oz pkg toasted sunflower kernels

- 1/2 c red onion chopped
- 3/4 c mayonnaise
- 1/4 c sugar
- 1/4 c sour cream
- 2 T lemon juice

Pasta with Shrimp and Scallops

ALFREDO SAUCE: 1. Heat 1 stick butter in saucepan until melted and add flour, stirring constantly
- 1 lb. scallops (bay or sea)
- 1 lb. shrimp (lg.)
- 1 lb. Divella pasta (tube)
- 1 lg. can College Inn chicken broth
- 1/2 lg. can water
- 2 tbsp. olive oil
- 2 cloves garlic, sliced thin
- 4 or 5 tbsp. flour
- 1 1/2 sticks butter
- 1/2 c. white wine
- 2 dashes of lemon pepper
- 1 dash nutmeg
- 1 pt. heavy cream
- 1/2 c. Parmesan cheese
- 1/2 container Contadina plum tomato sauce (refrigerated section)
- 1 c. Italian parsley, chopped fine
Grilled Lamb Loin with Cabernet Mint Sauce

1. Rinse lamb and pat dry
- 1 fat-trimmed lamb loin, boned, rolled, and tied (about 1 lb. total; see notes)
- 30 cloves garlic, peeled
- 1/2 cup plus 1/2 tablespoon extra-virgin olive oil
- 1/2 cup balsamic vinegar
- 1/2 cup chopped shallots (about 4 oz.)
- 2 tablespoons fresh thyme leaves or 1 tablespoon dried thyme
- 1 tablespoon chopped Italian parsley
- 1/2 About 1/2 teaspoon salt
- 1/4 About 1/4 teaspoon pepper
- 2 cups Cabernet Sauvignon or other dry red wine
- 3 cups fat-skimmed low-sodium beef broth
- 1/2 cup (1/4 lb.) plus 1 tablespoon butter or margarine
- 1/4 cup chopped fresh mint leaves
- 1 3/4 pounds Yukon Gold or russet potatoes, peeled and cut into 1 1/2-inch chunks
- 1/2 cup whipping cream
- Milk (optional)
Honeyed Chicken Teriyaki
