An American Vegetable Soup

1. Trim off the root end of the leeks
- 1/2 pound leeks
- 1/2 pound celery
- 1/2 pound green beans
- 1/2 pound carrots
- 1 to 2 zucchini, about 1/2 pound
- 2 tablespoons butter
- 1 cup finely chopped onions
- 1 cup crushed red ripe fresh tomatoes or use canned, preferably imported
- 8 cups beef broth
- Salt to taste, if desired
- Freshly ground pepper to taste
- 1 1/2 cups fresh corn kernels, scraped from the cob
- 2 cups freshly shelled green peas
- 1/4 cup chopped fresh basil or parsley

Chestnut Cheesecake

Heat oven to 350 degrees. Fill a kettle with water and place over high heat
- Base:
- 4 oz. crushed Graham crackers or 1 1/8 c. Graham cracker crumbs
- 1 tbsp. soft butter
- 1 1/2 tbsp. sweetened chestnut purée or spread
- Cheesecake:
- 2 8-oz. packages cream cheese at room temperature
- 3/4 c. sugar
- 3 large eggs
- 3 large egg yolks
- 3/4 c. sour cream
- 1 tsp. lime juice
- 1 tsp. vanilla extract
- 1 to 2 tbsp. rum
- 1 c. sweetened chestnut purée
- Cheesecake syrup:
- 1/4 c. rum
- 1 tbsp. sweetened chestnut purée
- 1/4 c. sugar
- 1 tbsp. butter
Mel London’s Jalapeño Corn Bread With Cheese

Preheat oven to 425 degrees
- 2 1/2 c. yellow cornmeal
- 1 c. stone-ground whole-wheat flour
- 1 tbsp. honey
- 1 tbsp. salt (optional)
- 4 tsp. baking powder
- 1 tsp. baking soda
- 3 eggs, at room temperature
- 1 1/2 c. buttermilk, at room temperature
- 1/2 c. vegetable oil
- 1 17-oz. can cream-style corn drained
- 6 jalapeño chili peppers, seeded and chopped
- 2 1/2 c. grated sharp cheddar cheese
- 1 large onion, grated
Welsh Bara Brith Bread

Warm 1/2 cup milk and combine with yeast and 1 teaspoon sugar
- 1 1/2 c. milk, approximately
- 2 packages dry yeast or 2 oz. compressed yeast
- 1/2 c. sugar
- 10 tbsp. butter
- 6 tbsp. lard
- 8 c. sifted all-purpose flour, approximately
- 1 tsp. salt
- 1 tsp. ground cinnamon
- 1/2 tsp. grated nutmeg
- 1/2 tsp. all spice
- 1/4 tsp. ground clove
- 6 oz. raisins or sultanas
- 6 oz. currants
- 4 oz. diced candied citron peel
- 2 eggs at room temperature

- 3/4 c. buttermilk
- 1 1/3 c. boiling water
