Cranberry-Pecan Bread

In a saucepan, combine the orange liqueur, sugar, water, cloves, and cinnamon stick and bring to a boil
- 1/2 cup orange flavored liqueur
- 1/2 cup sugar
- 1/4 cup water
- 1/2 teaspoon whole cloves
- 1 cinnamon stick, halved
- 1 1/2 cups fresh cranberries (or defrosted if frozen)
- 3/4 cup dark brown sugar
- 1 stick unsalted butter, at room temperature
- 2 large eggs
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3/4 cup buttermilk
- 1/4 cup fresh orange juice
- 1 cup chopped, toasted pecans
- 1 teaspoon orange zest
- 1 teaspoon vanilla
Roasted Corn Pepper Tomato Chowder

Next time you grill, throw on some extra bell pepper, corn, and tomato for this dish
- 3 red bell peppers, halved and seeded
- 3 ears shucked corn
- 1 1/2 pounds tomatoes, halved, seeded, and peeled (about 4)
- 2 tablespoons extra-virgin olive oil
- 4 cups chopped onion (about 2 medium)
- 3 (14-ounce) cans fat-free, less-sodium chicken broth
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup (1 ounce) crumbled blue cheese
- 2 tablespoons chopped fresh chives

Italian Barley Soup

A hearty barley soup
- 1 1/2 quarts basic brown soup stock (See Basic Brown Stock)
- 2 cups water
- 3/4 cup barley
- 1 cup celery, chopped
- 1 cup carrot, grated
- 1 cup yellow onion, peeled and chopped
- 4 garlic cloves, crushed
- 1/2 cup red wine
- 1 piece lemon peel, about 1 inch by 1/2 inch
- fresh ground black pepper
- salt
- 1/2 tablespoon basil
- 1/4 tablespoon oregano
- 1/2 cup fresh parsley, chopped
- 2 bay leaves
- 1/2 teaspoon fresh rosemary leaf
- 2 tomatoes, chopped
- 4 tablespoons tomato paste
- parmesan cheese or romano cheese, grate
Baby Bran Muffins Recipe

Preheat oven to 425F degrees, racks in the middle
- 2 cups white whole wheat flour OR stone ground whole wheat flour
- 1 1/2 cups wheat bran
- 3/4 teaspoon fine grain sea salt
- 1 1/4 teaspoons baking soda
- 2 tablespoons raw natural cane sugar OR brown sugar
- 2 cups full fat yogurt
- 1 egg, lightly beaten
- 1/2 cup honey, preferably a light honey such as clover
- 2 tablespoons melted butter
- 1 cup of add-ins of your choice - raisins, chopped dried fruit, nuts, etc (optional)
Pumpkin Roulade with Ginger Buttercream

- For the cake:
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon kosher salt
- 3 extra-large eggs, at room temperature
- 1 cup granulated sugar
- 3/4 cup canned pumpkin (not pie filling)
- 1/4 cup confectioners' sugar, plus extra for dusting
- For the filling:
- 12 ounces Italian mascarpone cheese
- 1 1/4 cups sifted confectioners' sugar

- 1/4 cup minced dried crystallized ginger (not in syrup)

- 3 lbs oxtails with separated joints
- Salt and pepper
- Olive oil
- 1 medium yellow onion, chopped
- 1 celery rib, chopped
- 1 large carrot, chopped
- 2 cups beef stock - More for Dads
- 2 cups of red wine - More for Dads
- 3 whole cloves garlic, peel still on
- One bay leaf
- Pinch of thyme
- Parsley
- 2 carrots, cut into 1-inch segments, large pieces also cut lengthwise
- 2 parsnips, cut into 1-inch segments, large pieces also cut lengthwise
- 2 turnips, cut into 1-inch pieces
