Put oven rack in middle position and preheat oven to 35o°F
- 2/3 cup hazelnuts (3 oz)
- 1/2 cup packed light brown sugar
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 2 sticks (1 cup) unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla
- 1 12-oz jar seedless raspberry jam
- Special equipment: a 2 to 2 1/4-inch fluted round cookie cutter and assorted 1/2-inch shaped cookie cutters or aspic cutters

Stuffed Peppers
- 4 large green peppers
- 1 cup cooked rice (I use brown rice)
- 1 can black beans (drained)
- 1 can corn
- 1.5-2 tomatoes, diced
- 1 onion
- 1/4 tsp white pepper
- 1.5 tsp salt
- 1/4 tsp red pepper
- 1.5 Tbsp chili powder
- 1 tbsp cumin
- 1 tbsp paprika
- olive oil
Guacamole

1. Cut avocados in half and remove pit
- 4 ripe avocados
- 1/2 cup red onion, diced finely
- 2 roma tomatoes, seeded and diced finely
- 1/4 - 1/2 cup cilantro, chopped finely
- 1 lime, juiced
- 1 teaspoon minced garlic
- salt and pepper to taste
- 1/2 jalapeno, seeded and diced finely (optional)

Healthy Three-Cheese Chicken Penne Pasta Bake

1. Heat oven to 375 degrees F 2
- 1-1/2 cups multi-grain penne pasta, uncooked
- 1 pkg. (9 oz.) fresh spinach leaves
- 1 lb. boneless skinless chicken breasts, cut into bite-size pieces
- 1 teaspoon dried basil leaves
- 1 jar (14-1/2 oz) spaghetti sauce
- 1-2 cloves garlic, minced
- 1 can (14-1/2 oz) diced tomatoes, drained
- 2 oz. (1/4 of 8 oz pkg) Neufchatel cheese, cubed
- 1 cup shredded 2% milk mozzarella cheese, divided
- 2 Tablespoons grated Parmesan cheese

1. Preheat oven to 350 degrees
- Garlic Butter Glaze:
- 1 (8 ounce) package refrigerated crescent roll dough
- 4 cheese sticks, halved
- 1 (3.5 ounce) package sliced pepperoni
- marinara or ranch sauce for dipping (optional)
- 2 tablespoons butter, melted
- 1/2 teaspoon Italian seasonings
- 1/4 teaspoon garlic powder
- 1 Tablespoon grated Parmesan cheese

- 2 big pkgs frozen peas (bags)
- 4 tsp. lemon juice
- 1/2 cup mayonnaise
- 2 tablespoons grated onion
- 2 tsp. dijon mustard (Coleman's Schillings dry mustard for example)
- 1 lb. crisp bacon
- salt & pepper to taste.

- 24 frozen dinner rolls
- 1 cup brown sugar
- 1 pkg butterscotch pudding(not instant)
- 1/4 cup white sugar
- 1 tsp cinnamon
- 1 stick of butter, melted
- 1 cup of pecans, coarsely ground
Tex-Mex black bean dip

Place beans in a bowl; partially mash until chunky
- 1 can (15 oz.) black beans, drained
- 1 tsp vegetable oil
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 1/2 cup diced tomato
- 1/3 cup mild picante sauce
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 cup shredded Monterey Jack cheese
- 1/4 cup chopped fresh cilantro
- 1 tablespoon fresh lime juice
- Cilantro sprigs (optional)
