Tracy's Fantasic Farfalle Salad with sun-dried tomatoes and spinach

1. Cook pasta (al-dente). Drain ,rinse well under cold water
- Dressing:
- 500 g (1 Ib)farfalle (bow-tie) pasta
- 6 oz. sundried tomatoes sliced in strips (jarred tomatoes in oil are much better than dry ones if only dry are available try to soak for an hour or two in cold water)
- 3 spring onions
- 500 g (1 Ib) Fresh spinach, stalks trimmed and leaves shredded
- 4 tablespoons roasted pine nuts (roast until golden brown on cookie sheet in toaster or regular oven)
- 1 tablespoon chopped fresh oregano
- 1/2 cup olive oil (or if using jarred tomatoes use I/, cup olive oil and 1/4 cup of the tomatoe oil)
- 1 clove garlic (not bulb) - crushed
- 1 teaspoon chopped fresh red chili pepper
- 1/2 teaspoon salt

Fix rice according to directions Stir in all remaining ingredients w/cooked rice Put mixture in a 9"x13" pan Melt b
- 1 box Uncle Bens wild rice
- 1 can French Style Green Beans
- 1 large can White Chicken
- 1 cup Mayo
- 1 can Cream of Celery Soup
- 1 diced Onion
- 1 can Water Chestnuts,sliced
- 2 tablespoons Butter
- 1/2 cup Slivered Almonds
- 1 cup Special K or Corn Flakes
- Salt and Pepper
Tracy's Outstanding Chickpea & Olive Salad

1. Cut the cucumber in half, lengthwise, scoop out sides and then slice into ½ inch slices
- 16 oz. can chickpeas
- 1 small cucumber
- 2 medium tomatoes
- 1 small purple onion
- 3 tablespoons chopped fresh parsley
- 1/2 cup pitted black olives
- 2 tablespoons lemon juice
- 1/3 cup olive oil
- 1 large clove garlic,crushed
- 2 teaspoons honey

- 1 1/2 Pounds Chicken
- 3 Tablespoons Soy Sauce
- 2 Teaspoons Cornstarch
- 2 Tablespoons Dry Sherry
- 1 Teaspoon Ginger
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Crushed Red Pepper
- 2 Tablespoons Cooking Oil
- 2 Med. Green Peppers in 3/4 inch Pieces
- 4 Green Onion or 2 Regular
- 1 Cup Walnuts
Grandma Palmieri's Italian Anise Cookies

- 9 each Eggs
- 6 cups Flour
- 1 tsp Baking Power (heaping)
- 1 pinch salt
- 1/2 tsp Vanilla
- 1/2 tsp Anise Flavoring
- Filling Ingredients
- 1/2 lb Ground almonds
- 4 each Rind of 4 oranges, ground
- 2 each Egg whites
- 3/4 cup Sugar
- 1/2 tsp Anise Flavoring
- 1/2 cup Juice of orange to right consistency

- 2-3 Skinless, Boneless Chicken Breast (Boiled)
- 1 Pkg. Mixed Vegetables (uncooked - frozen)
- 1 Can Cream of Celery Soup
- 1 Can Cream of Chicken Soup
- 1 Can of Chicken Broth
- 1 Large Russet Potato (Cut into small bites)
- 1/2 Large Yellow Onion
- 1 Clove (wedge) Garlic
- Ground Thyme, Salt, Pepper, Onion Powder, Garlic Salt
