Lasagna Soup!

My sister has made this soup 33 times! So finally I decided to make it and I'm kicking myself for waiting so long!
- FOR THE SOUP:
- 2 tsp. olive oil
- 1-1/2 lbs. Italian sausage (I used 1 pound)
- 3 c. chopped onions (I used 1 cup)
- 4 garlic cloves, minced
- 2 tsp. dried oregano
- 1/2 tsp. crushed red pepper flakes
- 2 T. tomato paste
- 1 28-oz. can fire roasted diced tomatoes (I used regular diced tomatoes)
- 2 bay leaves (I didn't have these, so I omitted them)
- 6 c. chicken stock
- 8 oz. fusilli pasta
- 1/2 c. finely chopped fresh basil leaves (didn't have that either!)
- salt and freshly ground black pepper, to taste
- CHEESY GOODNESS
- 8 oz. ricotta
- 1/2 c. grated Parmesan cheese
- 1/4 tsp. salt
- pinch of freshly ground pepper
Pulled BBQ Chicken Chili

This is a great way to use up leftover chicken!
- 1 tsp. olive oil
- 1/4 white onion, minced
- 2 cloves garlic, minced
- 2 tablespoons poblano pepper, minced
- 1/2 green pepper, chopped finely
- 1 large jalapeno - seeds removed, chopped
- 1 can fire roasted tomatoes - (I pureed this in a blender until smooth)
- 1 can black beans - rinsed
- 2.5 cups chicken broth
- 1 tablespoon chili powder
- 1 tsp. cumin
- 1/2 tsp. salt
- 2 tablespoons of your favorite bbq sauce - I used Sweet Baby Rays
- 2 cups cooked chicken (shredded)
- 1 tsp. crushed red pepper flakes
- 1 tsp. Worcestershire sauce

These muffins taste like chocolate cake! I'm not joking! I adapted this recipe from Heidi at 101 cookbooks
- 1 cup unpacked brown sugar
- 1/4 cup Canola oil
- 1 egg + 2 egg whites
- 1 banana, mashed
- 1 container yogurt (the one I used was vanilla at 90 calories)
- 1/4 cup ground flax seed
- 1 tsp. vanilla
- 2 cups grated zucchini (squeezed of excess moisture)
- 1/2 cup mini chocolate chips
- 2 cups flour
- 1/2 cup cocoa
- 1/2 tsp. salt
- 2 tsp. banking soda
- 1 tsp. cinnamon

- 1 cup yellow ballpark-style mustard, like French's
- 1 teaspoon dry mustard
- 1/4 cup ketchup
- 2 tablespoons sugar
- 1 teaspoon chili powder
- 1 tablespoon Worcestershire sauce
- 1 tablespoon freshly ground pepper
- 1 tablespoon red pepper flakes
- 3/4 cups water

- 1/3 cup brown sugar (looslely packed)
- 2 tablespoons canola oil
- 1 tablespoon butter
- 1/2 teaspoon vanilla extract
- 1/4 tsp. salt
- 1/4 tsp. baking soda
- 1 large egg white
- 1/2 cup flour
- 1/2 cup oats
- 2 tablespoons semi sweet chocolate chips
Homemade pretzels

Super easy to make - just flour, yeast, salt and water!
- 2 1/2 cups all purpose flour
- 1/2 tsp sea salt
- 1 tsp sugar
- 1 tbsp active dry yeast
- 1 cup warm water
- 1/2 cup warm water (for pretzel dipping)
- 1 tbsp baking soda
- coarse sea salt, for sprinkling
- poppy seeds (optional)
- I didn't have poppy seeds or sea salt, so I used a garlic/herb seasoning to mine
Homemade Crackers

- 1 teaspoon kosher salt
- 1 teaspoon sugar
- 2 1/2 tablespoons butter, unsalted
- 1/2 cup milk, plus 1 tablespoon for later
- 1 large egg
