Cajun Chicken Pasta

Directions Cook the pasta according to package directions
- 1 pound fettuccine
- 3 About 3 teaspoons Cajun spice mix
- 3 whole boneless, skinless chicken breasts, cut into cubes
- 2 tablespoons butter
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 whole green bell pepper, seeded and sliced
- 1 whole red bell pepper, seeded and sliced
- 1/2 large red onion, sliced
- Salt
- 4 whole Roma tomatoes, diced
- 2 cups low-sodium chicken broth
- 1/2 cups white wine
- 1 cup heavy cream
- Cayenne pepper, for sprinkling
- Freshly ground black pepper
- Chopped fresh parsley, for garnish
Spinach and Tomato Lasagna

- 30 ounces frozen chopped spinach
- 2 tablespoons olive oil
- 1 onion, chopped fine
- 5 garlic cloves, minced
- 1/8 teaspoon red pepper flakes
- 2 (28-ounce) cans crushed tomatoes
- Salt and pepper
- 6 tablespoons chopped fresh basil
- 24 ounces (3 cups) whole-milk or part-skim ricotta cheese
- 3 ounces Parmesan cheese, grated (1 1/2 cups)
- 2 large eggs
- 12 no-boil lasagna noodles
- 12 ounces whole-milk mozzarella cheese, shredded (3 cups)
Chicken Tortilla Soup

Instructions Preheat oven to 375 degrees
- 3-4 large boneless, skinless chicken breasts (about 2.5lbs worth)
- 1 tablespoon cumin
- 2 teaspoons cayenne pepper
- 2 teaspoons garlic powder
- salt and pepper, to taste
- 1 tablespoon olive oil
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 yellow onion, diced
- 1 red bell pepper, diced
- 1 poblano pepper, diced
- 1 jalapeño, finely diced
- 1 (4oz) can diced green chiles
- 1 (14oz) can fire roasted tomatoes
- 2 teaspoons cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- salt and pepper, to taste
- 32 oz fluid chicken stock (I used low sodium, no sugar added)
- juice of 2 limes
- chopped cilantro, to garnish
- crushed plantain chips, to garnish
- sliced avocado, to garnish
Cauliflower and Potatoes: "Aloo Gobi"

Directions Mix the Ginger-Garlic Paste, coriander, turmeric, and 1/2 cup water in a small bowl
- Ginger-Garlic Paste:
- 2 tablespoons Ginger-Garlic Paste, recipe follows, or 2 teaspoons grated ginger
- 1 tablespoon ground coriander
- 1/4 teaspoon turmeric
- 1 cup water, divided
- 2 tablespoons peanut oil
- 1 large serrano pepper, split down the middle leaving halves attached
- 1 teaspoon cumin seeds
- 1 small head cauliflower, cut into small florets
- 1 russet potato, peeled and cut into 1/2-inch cubes (similar size to cauliflower)
- Kosher salt
- 2 tablespoons freshly minced cilantro leaves, to garnish
- 1/2 cup cloves garlic, whole
- 1/2 cup fresh ginger, peeled, cut into 1/2-inch slices
- 1/4 cup canola oil

- Add:
- 1 1/2 - 2 cups pinto beans, (Mexican: "Frijoles pintos")
- 6-7 cups water
- ham hock, or some bacon or bacon grease, or a chunk of fat meat
- 3 bay leaves
- several hot dry red chiles like tepine, pico de gallo, pequin or Tabasco
- Half a dozen cloves of garlic
- 1 Tbl. dry leaf oregano
- 1 tsp. whole cumin seed, crushed a bit
- Good grind black pepper
- 1-4 Tbl. pure ground red chile powder
- 1 tsp. vinegar
- Add to taste: More little dry chiles.
- When done, remove from heat and stir in:
- 1/2 tsp. baking soda
- 1/2 tsp. sugar
- bit of salt

- 2 ounces bittersweet chocolate
- 2 ounces semisweet chocolate

- 1 teaspoon vanilla
- 1/2 cup all-purpose flour

- 2 pounds ground lamb
- Kosher salt and freshly ground black pepper
- 1/2 red onion, minced
- 1 teaspoon dried oregano
- 4 cloves garlic, minced
- 1 tablespoon tomato paste
- 2 tablespoons dry red wine
- 1 English cucumber
- Salt
- 1 cup whole-milk Greek yogurt
- 1/2 cup crumbled feta cheese
- 1 clove garlic, minced or pressed
- 2 tablespoons minced fresh mint
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon red wine vinegar
- 2 firm tomatoes, seeded and diced
