Momma Neely's Pot Roast

Preheat the oven to 350 degrees F
- 1 (3 to 4-pound) boneless bottom round roast
- Kosher salt and freshly ground black pepper
- 1/4 cup vegetable oil
- 2 yellow onions, peeled and quartered
- 3 cloves garlic, smashed
- 1 tablespoon tomato paste
- 1 cup red wine
- 2 cups beef stock
- 2 fresh thyme sprigs
- 2 bay leaves
- 3 carrots, peeled and sliced into 1/2-inch pieces
- Freshly chopped parsley leaves, for garnish
Zucchini Custard Bake

- 2 pounds zucchini, cut into small pieces

- 1/2 cup undiluted evaporated milk or light cream

German Potato Salad

Directions Toss the potatoes in a medium saucepan, cover generously with water and season generously with salt

- 8 bacon slices, cut into lardons

- 1/2 cup chicken stock
- 1/4 cup apple cider vinegar

- 12 tablespoons (1 1/2 sticks) butter, plus more for greasing, at room temperature
- 1 cup sugar
- 4 eggs, at room temperature
- 1 2/3 cups all-purpose flour
- 1 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/3 cup buttermilk
- 1/2 cup cocoa powder
- 2 teaspoons tequila
- 2 teaspoons triple sec
- 1 teaspoon vanilla extract
- One 14-ounce can sweetened condensed milk
- One 12-ounce can evaporated milk
- 4 ounces cream cheese, at room temperature
- 1 tablespoon vanilla extract
- 1/4 cup chopped pecans or walnuts
- Mixed berries, such as raspberries, blackberries, blueberries and strawberries
- Powdered sugar, for dusting
Dutch Apple Pancakes

Directions Preheat the oven to 450 degrees F
- 3 tablespoons unsalted butter
- 2 large apples, peeled, cored, and sliced 1/4-inch thick
- 1/4 cup light brown sugar, packed
- 3 eggs
- 1 teaspoon granulated sugar
- Pinch salt
- 1/2 cup whole, 2 percent fat, or 1 percent fat milk
- 1/2 cup all-purpose flour
- 1/4 teaspoon cinnamon

Preheat oven to 425°F. Whisk milk, eggs, sugar, vanilla, salt, and cinnamon in large bowl until well blended

- 4 large eggs
- 3 tablespoons sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 2/3 cup all purpose flour
- 4 tablespoons (1/2 stick) unsalted butter
- 12 ounces Golden Delicious apples (about 2), peeled, cored, thinly sliced
- 3 tablespoons (packed) golden brown sugar

Beef with Broccoli

In small bowl stir together the soy sauce, brown sugar, garlic flour and sherry until smooth, set aside
- 1/2 t baking soda
- 1 t sugar
- 1 T cornstarch
- 1 T low sodium soy sauce
- 1 T water
- 2 T vegetable oil
- 1 1/2 flank steak, sliced into thin strips.
- Whisk together the above ing in large bowl, toss with steak and marinade at least 1 hour, refrigerated.
- 1/2 C low sodium soy sauce
- 2 T brown sugar
- 4 cloves minced garlic
- 2 T flour (corn starch if gluten free)
- 1 T sherry
- 3 T vegetable oil
- 2 heads of broccoli, crowns only
