Slow Cooker Pulled Pork Sandwiches

Rub spicy barbecue rub liberally over entire surface of meat
- 1 (3 lb.) fresh picnic shoulder pork roast
- Spicy Barbecue Rub (recipe below)
- 1/4 cup beer
- 8 sandwich rolls
- Spicy Barbecue Rub
- 1/2 cup packed brown sugar
- 1/2 cup granulated sugar
- 1/2 cup garlic salt
- 1/2 cup paprika
- 3 Tbsp. seasoned salt
- 1 Tbsp. celery salt
- 1/4 cup chili powder
- 3 Tbsp. black pepper
- 1 Tbsp. cayenne pepper
- 1 Tbsp. cumin
- 1/2 tsp. allspice
- 1/2 tsp. savory
- Combine ingredients in bowl; mix well. Store in an airtight container.
Great Northern Beans with Leeks and Bacon

1. Place beans in a large Dutch oven
- 2 cups dried Great Northern beans
- 4 slices thick-sliced bacon, diced
- 2 tablespoons extra-virgin olive oil
- 6 cups thinly sliced leeks, white and
- ten der green parts (2 bunches)
- 2 large garlic cloves, minced
- 1 teaspoon salt
- Coarsely ground black pepper
Portuguese Fish Stew (Caldeirada de Peixe)

- 1/4 cup olive oil
- 1 large onion, chopped
- 2 leeks, washed to remove interior soil and coarsely chopped
- 1 bulb fennel, white parts only, coarsely chopped
- 5 finely chopped garlic cloves
- 1 cup diced tomatoes, canned or fresh
- 1 red bell pepper, cored, seeded, and diced
- 1 bay leaf
- Zest of 1 orange
- 1 quart fish stock or water, or an 8-ounce bottle of clam juice plus 3 cups water
- 2 cups dry white wine
- Scant 1/4 tsp. hot red pepper flakes
- 1 Tbsp. salt
- Freshly ground pepper to taste
- 3 pounds mixed white, non-oily boneless fish and shellfish, or just fish
Roasted Bell Peppers

Cover a heavy baking sheet with aluminum foil
- 2 red bell peppers
- 1/3 cup extra virgin olive oil
- 2 garlic cloves, halved
- 1/2 tsp. kosher salt
- 1/2 tsp. freshly ground pepper
Chicken Lo Mein

In a small bowl mix together chicken broth and cornstarch
- 8 ounces linguini, cooked al dente
- 2 skinless, boneless chicken breasts, cut into strips & sprinkled lightly with soy sauce
- 1/4 cup peanut oil
- 1/2 teaspoon dried red pepper flakes
- 2 cups sliced mushrooms
- 1 carrot, sliced into thin strips
- 1 red bell pepper, sliced into strips
- 2 tablespoons minced garlic
- 2 teaspoons minced ginger
- 5 scallions, green and white part, sliced
- 1 tablespoon cornstarch
- 1 cup chicken broth
- 1/4 cup hoisin sauce
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1/4 teaspoon curry powder
- salt and pepper to taste

Heat 1 tablespoon of the peanut oil in a well-seasoned wok or large non-stick skillet over medium-high heat
- 3 tablespoons peanut oil, divided
- 2 large eggs, lightly beaten with a pinch of kosher salt
- 4 scallions (white and green), thinly sliced
- 1/2 cup chopped carrot
- 1 cup sliced mushrooms
- 1 large clove garlic, minced
- 1 teaspoon minced fresh ginger
- 2 tablespoons soy sauce
- 1 teaspoon toasted sesame oil
- 3 cups cooked long-grain rice
- 1/2 cup frozen peas, defrosted
Pina Colada Blackened Tilapia with Pineapple Salsa

- Salsa:
- 1 small can crushed pineapple
- 1/2 cup coconut milk
- 1 lime, zested and juiced
- 1 large clove garlic, minced
- Salt and pepper to taste
- 4 tilapia fillets
- 2 cups diced fresh pineapple
- 1/2 cup chopped red onion
- 1 jalapeno pepper, ribs and seeds removed, minced
- 1 lime, zested and juiced
- 1 handful fresh parsley, chopped
- 1/4 tsp. salt

- 2 lb. chicken breasts, skin removed, cut into 1 inch chunks
- 2 tablespoons salt, divided
- 2 teaspoons ground black pepper, divided
- 1/4 cup ghee or clarified butter
- 4 cups sliced onions
- 3-4 tablespoons sugar
- 3 tablespoons minced garlic
- 3 tablespoons minced ginger
- 1 minced jalapeno chile, seeds and membrane removed
- 1 bay leaf
- 2 tablespoons curry powder
- 4 cups diced tomatoes
- 1 tablespoon tomato paste
- 4 cups boiling potatoes, 2-inch cubes
- 6 cups chicken stock, divided

Preheat oven to 350F. Grease and lightly flour a 9 inch round cake pan or spring form pan
- 6 ripe peeled peaches, halved
- 2 tsp. brown sugar
- 1 vanilla bean, split lengthwise and seeds removed, or 1/2 tsp vanilla extract
- 1/4 cup water
- 8 tbsp. butter, softened
- 1/2 cup sugar
- 2 eggs
- 1 cup self-rising flour
- 1/4 tsp. salt
- Confectioner’s sugar, optional
- Vanilla ice cream or whipped cream, optional

- 1 1/2 tbsp canola oil
- 1 yellow onion, diced
- 1 carrot, diced
- 2 stalks celery, diced
- 2 cloves garlic, minced
- 1 sprig rosemary
- 1/4 cup fresh parsley, chopped
- 1 bay leaf
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1 lb dried small white beans, rinsed and picked through
- 1 lb ham steak, fat removed then diced
- 1 smoked ham hock
- 8-10 cups of water, plus extra if needed
