Goat Cheese Soufflé with Thyme

- Butter, plus 2 tablespoons freshly grated Parmesan, for the dish
- 1 1/4 cups milk or cream
- Aromatics: 1 bay leaf, several thyme sprigs, 2 thin onion slices
- 3 tablespoons butter
- 3 tablespoons flour
- Salt and freshly milled pepper
- Pinch cayenne
- 4 egg yolks
- 1 cup (about 4 ounces) crumbled goat cheese, preferably a Bucheron or other strong-flavored cheese
- 6 egg whites
- Several plump thyme sprigs, leaves only
Catalan-Style Beef Stew with Mushrooms

- Stew:
- 2 tablespoons olive oil
- 2 large onions , chopped fine
- 1/2 teaspoon sugar
- Kosher salt and pepper
- 2 plum tomatoes , halved lengthwise, pulp grated on large holes of box grater, and skins discarded
- 1 teaspoon smoked paprika
- 1 bay leaf
- 1 1/2 cups dry white wine
- 1 1/2 cups water
- 1 large sprig fresh thyme
- 1/4 teaspoon ground cinnamon
- 2 1/2 pounds boneless beef short ribs , trimmed and cut into 2-inch cubes
- Picada:
- 1/4 cup whole blanched almonds
- 2 tablespoons olive oil
- 1 slice hearty white sandwich bread , crust removed, torn into 1-inch pieces
- 2 garlic cloves , peeled
- 3 tablespoons minced fresh parsley

- 1 tablespoon toasted sesame oil
- 1 teaspoon baking soda
- 2 (6-ounce) boneless, skinless chicken breasts, trimmed and cut crosswise into 1/4-inch-thick slices
- 3 tablespoons Chinese rice wine or dry sherry
- 1 tablespoon cornstarch
- 1/2 cup chicken broth
- 3 tablespoons soy sauce
- 3 tablespoons oyster sauce
- 1/4 teaspoon white pepper

- 6 ounces shiitake mushrooms, stemmed and sliced thin
- 1 carrot, peeled and cut into 2-inch matchsticks
