Cauliflower and Caramelized Onion Tart

Position rack in center of oven; preheat to 425°F
- 1 small head of cauliflower (about 1 pound), cored, cut into 1-inch florets
- 2 1/2 tablespoons olive oil, divided
- 1 tablespoon truffle oil*
- 1 refrigerated pie crust
- 1 large onion, halved lengthwise, thinly sliced
- 1 tablespoon Dijon mustard
- 2 large eggs
- 1 (7- to 8-ounce) container mascarpone cheese (Italian cream cheese)*
- 1/2 cup whipping cream
- 1/4 teaspoon ground white pepper
- Pinch of ground nutmeg
- 1 cup grated Gruyère cheese
- 3/4 cup grated Parmesan cheese
- Available at some supermarkets, specialty foods stores, and Italian markets nationwide.
Shrimp-and-Pork Wontons

Uses pork, prosciutto, cod as well as shrimp, all in small amounts
- 5 ounces raw shrimp—shelled, deveined and chopped
- 1/4 pound fatty ground pork
- 2 ounces napa cabbage, finely chopped (3/4 cup)
- 1 ounce prosciutto, minced
- 1 ounce cod, finely chopped
- 2 scallions, finely chopped
- 1 tablepoon minced peeled fresh ginger
- 2 teaspoons Shaoxing wine
- 2 teaspoons canola oil
- 2 teaspoons cornstarch
- 1 teaspoon kosher salt
- 1 teaspoon Asian fish sauce
- 1/4 teaspoon ground white pepper
- 1/4 teaspoon toasted sesame oil
- 36 wonton wrappers
- Chili oil, for dipping
Japanese-Style Stir-Fried Noodles with Beef

1. Combine 1 tablespoon water and baking soda in medium bowl
- 1/8 tsp baking soda
- 12 oz flank steak, trimmed, sliced lengthwise into 2-to 2-1/2-inch strips, each strip sliced crosswise 1/4 inch thick
- 1/4 cup ketchup
- 1/4 cup soy sauce
- 2 TB Worcestershire sauce
- 1-1/2 TB packed brown sugar
- 3 garlic cloves, minced
- 3 anchovy fillets, rinsed, patted dry, and minced
- 1 tsp rice vinegar
- 1 lb fresh or 8 ounces dried lo mein noodles
- 1 TB vegetable oil
- 6 oz shiitake mushrooms, stemmed and sliced 1/4 inch thick
- 1 carrot, peeled and sliced 1/8 inch thick on bias
- 2/4 c chicken broth
- 6 c napa cabbage, sliced crosswise into 1/2-inch strips
- 7 scallions, cut on bias into 1-inch lengths

Grilled Lamb Shashlik Kebabs

Meat can be marinated in 'frig for several days
- 1-1/2 lb boneless lamb leg, fat and sinew removed, cut into 16 pieces about 1-1/2 ounces each
- 1 large onion
- 2 tsps fresh thyme
- 1-1/2 tsps ground black pepper
- 1/3 c olive oil
- 3/4 tsp salt
- 1/2 lemon
Baked Beans with Slab Bacon and Breadcrumbs

Soak Beans overnight. Beans can be baked 5 days ahead
- 2 c. dried navy or cannellini beans, soaked overnight
- 2 medium onions, 1 halved, 1 thinly sliced
- 1 Parmesan rind (optional), plus 1/2 cup finely grated Parmesan
- 1 head garlic, halved crosswise, plus 4 cloves, finely chopped, divided
- 2 bay leaves
- 2 tsp kosher salt, plus more
- 8 ounces slab bacon, cut into 2x1/4” pieces
- 1 large shallot, thinly sliced
- 4 sprigs thyme plus 1 tablespoon leaves
