Kale Minestrone with Pistou

Do Ahead: Soup can be made 2 days ahead (or 2 months if frozen)
- PISTOU:
- 3 sprigs oregano
- 3 sprigs rosemary
- 2 bay leaves
- 2 TB olive oil
- 4 ounces pancetta (Italian bacon), chopped (optional)
- 1 onion, chopped
- 1 leek, white and pale-green parts only, thinly sliced
- 2 carrots, peeled, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, thinly sliced
- 1/2 tsp crushed red pepper flakes
- Kosher salt
- 2 TB tomato paste
- 1 28-oz. can whole peeled tomatoes, drained
- 1 Parmesan rind (about 2 ounces; optional)
- 3 c. cooked cannellini beans, cooking liquid reserved if desired, or two 15-oz. cans, rinsed
- Freshly ground black pepper
- 12 oz baby Yukon Gold potatoes, scrubbed, cut into 1/2” pieces
- 1/2 bu Tuscan kale, ribs and stems removed, leaves torn into 1” pieces
- 2 garlic cloves
- 1 c. fresh basil leaves
- 1/2 c. olive oil
- 2 TB freshly grated Parmesan
- 1 tsp finely grated lemon zest
- Kosher salt
Pizza with Smoked Salmon and Caviar

Preheat oven to 375°.? Cover sliced onion with white wine vinegar, salt, sugar, water
- 1 recipe Pizza Dough (see below) OR Lavash
- (2 cloves garlic, minced)
- (3 tablespoons olive oil)
- 3 ounces fontina, coarsely grated
- 3 ounces mozzarella, coarsely grated
- 1/2 red onion, very thinly sliced - pickled
- 5 ounces thinly sliced smoked salmon
- 1/3 cup creme fraiche
- salt and freshly ground pepper
- 1 to 2 tablespoons green onion or chives, minced
- 1 ounce caviar, beluga, sevruga, osetra, or American sturgeon
Salsa-Fresh Tomatillo

- 1/2 pound small fresh tomatillos, husked and rinsed
- 1 large garlic clove
- 1 tablespoon chopped fresh serrano chile with seeds, or to taste
- 2 tablespoons chopped cilantro
- 2 tablespoons water
Mushroom and Leek Galette with Gorgonzola

Cutting a few small holes in the dough prevents it from lifting off the pan as it bakes
- Dough :
- 1-1/4 cups (6-1/4 ounces) all-purpose flour
- 1/2 cup (2-3/4 ounces) whole-wheat flour
- 1 tablespoon sugar
- 3/4 teaspoon salt
- 10 tablespoons unsalted butter, cut into 1/2-inch pieces and chilled
- 7 tablespoons ice water
- 1 teaspoon white vinegarFilling
- 1-1/4 pounds shiitake mushrooms, stemmed and sliced thin
- 5 teaspoons olive oil
- 1 pound leeks, white and light green parts only, sliced 1/2 inch thick and washed thoroughly (3 cups)
- 1 teaspoon minced fresh thyme
- 2 tablespoons crème fraîche
- 1 tablespoon Dijon mustard
- Salt and pepper
- 3 ounces Gorgonzola cheese, crumbled (3/4 cup)
- 1 large egg, lightly beaten

Green Rice

Puree spinach and cilantro in blender/food processor and stir in to rice
- 1 tablespoon extra virgin olive oil
- 2 jalapeno peppers, seeds and ribs removed and finely chopped
- 1 1/2 cups rice
- 3 cups chicken or vegetable stock, divided
- 3/4 pound baby spinach
- 1/2 cup cilantro leaves
Vegetable Soup with Sriracha, Lemongrass, and Tofu

Heat oil in heavy large pot over medium-low heat
- 1 TB olive oil
- 4 c thinly sliced onions
- 3 garlic cloves, sliced
- 4 c vegetable broth
- 1 4-inch piece lemongrass,* cut from bottom of stalk and smashed with back of knife
- 1 TB sriracha sauce**
- 5-ounce package baby spinach
- 1 c of 1/2-inch cubes firm tofu
- 3 TB fresh lime juice
- 1 TB chopped fresh cilantro

Grilled Pizza

The dough for our grilled pizza is easy to make in the food processor and proofs for at least 24 hours up to 3 days...
- Dough
- 3 c (16-1/2 oz) King Arthur bread flour
- 1 TB sugar
- 1/4 tsp instant or rapid-rise yeast
- 1-1/4 c plus 2 tablespoons ice water (11 ounces)
- 1 TB vegetable oil, plus extra for counter
- 1-1/2 tsp Salt
- Sauce
- 1 (14-ounce) can whole peeled tomatoes, drained with juice reserved
- 2 TB extra-virgin olive oil
- 2 tsp minced fresh oregano
- 1/2 tsp sugar, plus extra for seasoning
- Salt
- 1/4 tsp red pepper flakes
- Pizza
- 1/2 c plus 1 TB olive oil, plus extra for drizzling
- 3 oz Parmesan cheese, grated (1-1/2 cups)
- 8 oz fresh whole-milk mozzarella cheese, torn into bite-size pieces (2 cups)
- 3 TB shredded fresh basil

Smoked Bourbon Chicken
