Strip Steak Frites with Béarnaise Butter

Make the frites: Put the peeled potatoes in a bowl of cold water
- FRITES:
- 4 baking potatoes, peeled
- 1 gallon water
- 1/4 cup fine sea salt
- 1/4 cup distilled white vinegar
- Canola oil, for frying
- BÉARNAISE BUTTER:
- 1/4 cup minced shallots
- 1/4 cup dry white wine
- 1 1/2 tablespoons tarragon vinegar
- 2 sticks unsalted butter, at room temperature
- 1/4 cup minced tarragon
- 1 tablespoon minced parsley
- 1 tablespoon minced chervil (optional)
- Kosher salt
- Pepper
- STEAK:
- Four 8-ounce dry-aged New York strip steaks, cut 3/4 inch thick, at room temperature
- Kosher salt
- Pepper
- 2 tablespoons canola oil
OREO Cookie Cupcakes

Cream together the cream cheese, butter, and vanilla until smooth
- 8 oz. cream cheese, at room temperature (takes about 2 hours to reach room temp)
- 4 oz. salted butter, at room temperature (1 stick)
- 1 teaspoon vanilla
- 2 cups powdered sugar
- 12 crushed Double Stuf Oreos (I do mine in a food processor), or any chocolate sandwich cookie will work!
- 1-2 tablespoons heavy cream, as needed
Dunked Dulce de Leche Doughnuts

Make the doughnuts Preheat the oven to 350º and spray two nonstick 6-cavity doughnut pans with cooking oil
- Doughnuts:
- 1 1/2 cups Silvana’s Kitchen Gluten-Free All-Purpose Flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 large eggs, at room temperature
- 6 tablespoons unsalted butter, melted and cooled
- 3/4 cup packed light brown sugar
- 1/4 cup dulce de leche
- 1/2 cup whole milk, at room temperature
- 2 teaspoons pure vanilla extract
- DULCE DE LECHE GLAZE:
- 3/4 cup packed light brown sugar
- 6 tablespoons unsalted butter, at room temperature
- 1/2 teaspoon salt
- 1/4 cup dulce de leche
- 1/4 cup whole milk
- 1 tablespoon light corn syrup or brown rice syrup
- 1 teaspoon pure vanilla extract
- 1 cup confectioners’ sugar, sifted
Malted Milk Chocolate Bourbon Ice Cream

Place the chocolate baking chips in a large bowl and set aside
- 6 6 6 ounces milk chocolate baking chips (see notes)
- 8 8 8 large egg yolks
- 3/4 3/4 3/4 cup granulated sugar
- 1/4 1/4 1/4 cup malted milk powder
- 1 1/2 1 1/2 1/2 cups heavy cream
- 1 1 1 cup whole milk
- 1 1/2 1 1/2 1/2 teaspoon pure vanilla extract

Chicken and Lemon Orzo Soup

In a dutch oven, heat the olive oil over medium heat
- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 3 large carrots, peeled and diced
- 2 celery stalks, diced
- 2 garlic cloves, minced
- salt
- pepper
- 1 tablespoon herbs de provence
- 1/2 cup white wine
- 7 cups chicken broth
- 1/2 cup lemon juice
- 2 tablespoons lemon zest
- 1 3/4 cups orzo pasta
- 2 1/2 cups boneless, skinless chicken breast, fully cooked and diced
- 1/2 cup fresh parsley, chopped
Butternut Squash and Spinach Lasagna

Preheat the oven to 400. Toss the butternut squash with 1 tbsp olive oil, salt and black pepper
- 1 1/4 lb butternut squash, peeled and cut into 1/2-inch cubes
- 3 tbsp olive oil, divided
- salt and black pepper, to taste
- 1 onion, diced
- 1/2 lb roasted red peppers, diced
- 4 cloves garlic, minced
- 1/2 tsp Tuscan seasoning
- 8 oz ricotta cheese
- 2 eggs, lightly beaten
- 1 lb fresh mozzarella, shredded, divided
- 2 cups marinara sauce
- 1 lb lasagna noodles
- 5 oz baby spinach leaves
Peanut Butter Chocolate Chip Banana Muffins

These muffins are just barely sweet as is
- 1 1/2 cups (8 ounces) flour
- 1/4 teaspoon salt
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- dash cloves
- dash allspice
- 2 very ripe medium bananas
- 1/4 cup brown sugar
- 3/4 cup (6 ounces) Chobani banana Greek yogurt
- 2 Tablespoons milk
- 1 egg
- 1/2 cup peanut butter
- 1/2 teaspoons vanilla extract
- 3/4 cup mini chocolate chips (optional, but highly recommended)
Chocolate Chip Peanut Butter Pound Cake w/ Peanut Butter Glaze

1. Preheat oven to 325 degrees F
- CAKE:
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup creamy peanut butter
- 1/2 cup butter, at room temperature
- 3 cups granulated white sugar
- 6 large eggs
- 2 teaspoons vanilla extract
- 1 1/2 cups chocolate chips
- GLAZE:
- 1 1/2 cups sifted powdered sugar
- 1/4 cup milk
- 1/4 cup creamy peanut butter
- 1/2 teaspoon vanilla extract
- 1/4 cup mini chocolate chips
Salted Caramel Bourbon Apple Pie

First, make the pastry. Place the flour, sugar and salt into the bowl of a stand mixer
- For the pastry:
- 3 cups (450g) plain flour
- 1 tbsp sugar
- pinch of salt
- 2 sticks (225g) cold butter
- 1 tbsp apple cider vinegar
- 1/2 cup (125ml) ice cold water
- For the caramel:
- 1/2 cup (110g) caster sugar
- 2 tbsp water
- 2 tbsp (30g) butter
- 1/4 cup (60ml) heavy cream
- 2 tbsp bourbon
- 1/2 - 1 tsp salt
- For the apples:
- 6 large or 8 small granny smith apples
- 2 lemons
- 1/2 cup (110g) caster sugar
- 2 tbsp plain flour
- 2 tsp cinnamon
- 1 tsp vanilla bean paste
- To decorate:
- 1 egg, beaten

To make the cupcakes, preheat the oven to 350° F
- For the cupcakes:
- 3 sticks unsalted butter, at room temperature
- 1 1/2 cups light brown sugar, packed
- 4 large eggs
- 2 2/3 cups all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 cup milk
- 2 tsp. vanilla extract
- 1 cup chocolate chips (semisweet or bittersweet)
- For the filling:
- 4 tbsp. unsalted butter, at room temperature
- 6 tbsp. light brown sugar, packed
- 1 cup plus 2 tbsp. all-purpose flour
- 7 oz. sweetened condensed milk
- 1/2 tsp. vanilla extract
- 1/4 cup mini semisweet chocolate chips
- For the frosting:
- 2 sticks unsalted butter, at room temperature
- 1/2 cup light brown sugar, packed
- 2 1/3 cups confectioners’ sugar
- 2/3 cup all-purpose flour
- 1/2 tsp. salt
