No Bake Lemon Cookie Fruit Tart

Press/drain tofu while preparing crust
- CRUST:
- 7-12 medjool dates, pitted (if not sticky and moist, see notes)
- 2 cups raw walnuts (or sub other nut, such as pecan or almond)
- 1/4 tsp sea salt (optional)
- FILLING:
- 12 ounces firm silken tofu (I used Morinaga), patted dry and gently pressed in a clean towel for at least 15 minutes, up to 1 hour
- 1/2 tsp vanilla extract
- ~1/4 cup maple syrup, agave nectar or honey if not vegan (or use date caramel - I did half date caramel, half agave)
- juice of 1 lemon (~2 Tbsp)
- 1 1/2 cups mixed fresh fruit, divided (blueberries, strawberries, kiwi, mango, or whatever you prefer)
Mimosa Cupcakes

For the cupcakes: Preheat the oven to 350 degrees F
- Cupcakes:
- 1 cup fresh or frozen raspberries
- 2 cups all-purpose flour
- 1 and 1/2 cups white sugar
- 2 and 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- Pinch of salt
- 1/2 cup butter, at room temperature
- 1/2 cup milk
- 1/4 cup sparkling wine, such as Champagne (I used Prosecco, an Italian sparkling wine)
- 1 and 1/2 teaspoons vanilla
- 4 egg whites
- Frosting:
- 1/2 cup butter, at room temperature
- 3 cups icing sugar
- 2 tablespoons fresh orange juice
- 2 tablespoons sparkling wine, such as Champagne or Prosecco
- Candied orange peel or other garnish, for decoration (optional)
General Tso's Chicken

- For the marinade:
- 2 boneless, skinless chicken breasts, cut into 1/2 inch pieces (about 1-1/2 pounds)
- 1 cup cornstarch mixed with 1 teaspoon salt
- 2 large cloves garlic, minced
- 6 small dried red chilies, seeded and broken into pieces
- 1 tablespoon peanut oil
- Peanut oil for deep frying
- 2 large egg whites
- 1 tablespoon soy sauce
- 1 tablespoon Chinese rice wine or dry sherry
- For the sauce:
- 1/2 cup chicken stock
- 3 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 2 teaspoons sesame oil
- 2 tablespoons Chinese rice wine or dry sherry
- 3 tablespoons white granulated sugar
- 2 teaspoons cornstarch
Grilled Chicken & Strawberry Salad Wrap

Place the chicken breasts in a large plastic storage bag
- 2 whole Boneless, Skinless Chicken Breasts
- 1/2 cups Bottled Balsamic Vinaigrette
- 1 whole Package (12 Ounces) Mixed Salad Greens
- 12 whole Medium Strawberries, Hulled And Quartered
- 4 whole Green Onions Sliced (white And Light Green Parts)
- 1/4 cups Pecans, Chopped
- 4 ounces, weight Goat Cheese Crumbled
- 6 whole Large Whole Wheat Tortillas
Balsamic-Roasted Brussels Sprouts

Preheat oven to 425. Line a baking sheet with aluminum foil
- 1 lb Brussels sprouts, bottoms trimmed (larger sprouts can be halved)
- 3 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- 2 tsp kosher salt
- 1 tsp black pepper
Strawberry Pretzel Salad In Jars

1. Preheat oven to 350 degrees F
- 1 1/2 cups crushed salted pretzels
- 4 tablespoons white sugar
- 10 tablespoons unsalted butter, melted
- 1 cup granulated sugar
- 2 (8 ounce) packages cream cheese, room temperature
- 1 teaspoon pure vanilla extract
- 1 (8 ounce) container frozen whipped topping (Cool Whip), thawed
- 1 (6 ounce) package strawberry flavored gelatin
- 2 cups boiling water
- 1 (16 ounce) package frozen sliced strawberries
Lemon Cupcakes with Lemon Buttercream Frosting

Preheat oven to 350 degrees
- Simple Syrup:
- 3/4 cup all-purpose flour
- 3/4 cup cake flour
- 1 tsp baking powder
- 1/8 tsp baking soda
- 1/4 tsp salt
- 3/4 cup + 2 Tbsp granulated sugar
- 1 Tbsp lemon zest (zest of 2 medium lemons)
- 1/2 cup unsalted butter, softened
- 1 large egg
- 2 large egg whites
- 1/2 tsp vanilla extract
- 1/4 cup + 3 Tbsp buttermilk
- 1 1/2 Tbsp fresh lemon juice
- 1 Tbsp fresh lemon juice
- 1 Tbsp sugar
- Lemon Buttercream Frosting:
- 3/4 cup butter, nearly at room temperature (I used 1/2 cup unsalted and 1/4 cup salted)
- 1 1/2 tsp fresh lemon zest
- 2 1/2 cups powdered sugar
- 1 Tbsp fresh lemon juice
- 1 Tbsp heavy cream
- 1/2 tsp vanilla extract
- 1/4 tsp lemon extract
- Lemon slices or lemon drop candies and mint leaves for decorating (optional)
Potato and Bacon Pie

Pre heat the oven to 350 degrees F
- 1 sheet puff pastry, thawed
- 4 tablespoons butter
- 6 slices bacon, chopped
- 1 tablespoon shallot, chopped
- 4 medium sized potatoes, peeled
- 1/2 cup heavy cream
- 1 tablespoon fresh dill
- salt
- pepper
Vanilla Caramel Gelato

Set a sieve over a mixing bowl; set aside
- For the Gelato:
- 4 large egg yolks
- 1/2 cup sugar
- 1 cup whole milk
- 1 cup heavy whipping cream
- 2 to 3 tablespoons pure vanilla extract
- For the Caramel Sauce:
- 1 (14 oz.) bag Caramel Candies, unwrapped
- 1 stick butter
- 1 (14 oz.) can sweetened condensed milk
PF Chang's Chicken Lettuce Wraps

- 1 tablespoon olive oil
- 1 pound ground chicken
- 2 cloves garlic, minced
- 1 onion, diced
- 1/4 cup hoisin sauce
- 2 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
- 1 tablespoons freshly grated ginger
- 1 teaspoon Sriracha, or more, to taste
- 1 (8-ounce) can whole water chestnuts, drained and diced
