Pork Stir-Fry with Noodles (Lo Mein)

1. Bring 4 quarts water to boil in Dutch oven over high heat
- 3 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 2 tablespoons hoisin sauce (see note)
- 1 tablespoon toasted sesame oil
- 1/4 teaspoon five-spice powder
- 1 pound boneless country-style pork ribs, trimmed of surface fat and excess gristle and sliced crosswise into 1/8-inch pieces (see note)
- 1/4 teaspoon liquid smoke (optional)
- 1/2 cup low-sodium chicken broth
- 1 teaspoon cornstarch
- 2 medium garlic cloves, minced or pressed through a garlic press (about 2 teaspoons)
- 2 teaspoons grated fresh ginger
- 4 1/2 teaspoons vegetable oil
- 4 tablespoons Chinese rice cooking wine (Shao-Xing) or dry sherry (see note)
- 1/2 pound shiitake mushrooms, stems trimmed, caps cut in halves or thirds (about 3 cups)
- 2 bunches scallions, whites thinly sliced and greens cut into 1-inch pieces (about 2 cups)
- 1 small head Napa or Chinese cabbage, halved, cored, and sliced crosswise into 1/2-inch strips (about 4 cups)
- 12 ounces Chinese egg noodles (fresh) or 8 ounces dried linguine (see note)
- 1 tablespoon Asian chile garlic sauce
Crab and Cream Cheese Stuffed Jalapeno Poppers

FOR JALAPENO POPPERS: Preheat the oven to 375 degrees
- FOR JALAPENO POPPERS:
- 4 jalapenos sliced in half lengthwise with all of the insides removed (seeds included!)
- 4 oz (about half a package) of cream cheese
- 3 oz of crab meat
- 1 Tablespoon of finely diced green onion (plus more for garnish)
- Panko bread crumbs
- Non-stick cooking spray
- FOR EEL SAUCE:
- 1/2 cup of low sodium soy sauce
- 1/2 cup of mirin (I used dry sherry plus and extra tablespoon of sugar)
- 1/4 cup of sugar
- FOR DYNAMITE SAUCE:
- 3 Tablespoons of light mayonaise
- 3/4 Tablespoon of Sriracha
Apple Spice Cake with Salted Caramel Sauce

Preheat the oven to 400 degrees
- 2 cups brown rice flour *
- 3/4 cup tapioca starch *
- 1/2 cup potato starch *
- 1 tablespoon baking powder
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon kosher salt
- 2/3 cup light brown sugar
- 2 eggs
- 1 1/2 cups sour cream
- 1/2 cup milk
- 6 tablespoons butter, melted and slightly cooled
- 3 1/2 cups apples, I used 2 huge honeycrisp apples, peeled and diced into 1/4" pieces
- 1/4 cup raw sugar, any large grain sugar should work
- Topping: Salted Caramel Sauce or Vanilla Whipped Cream
- if you aren't in need of a gluten free recipe, substitute 3 cups all purpose flour for the items marked with an *
Parmesan Fish Sticks

For the Fish Sticks: Preheat the oven to 450 degrees F
- FISH STICKS:
- 1 (18-ounce) center-cut salmon fillet, about 9 by 4 inches, skinned
- 1/2 cup all-purpose flour
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon freshly ground black pepper
- 3 egg whites
- 1 cup grated Parmesan
- 1 cup seasoned bread crumbs
- Olive oil, for drizzling
- DIPPING SAUCE:
- 1/3 cup reduced fat mayonnaise
- 1/3 cup lowfat plain yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon chopped fresh parsley or chives
Slow Cooker Beef and Rice Enchilada Soup

In a medium skillet heat the oil over medium-low heat
- 2 tablespoons olive oil
- 1 large yellow onion, diced
- 1 small green or red bell pepper, diced
- 3 cloves garlic, minced
- coarse salt and fresh black pepper
- 1 can (11 ounce) Ro-tel diced tomatoes & green chiles with the juices
- 4 cups low-sodium beef broth
- 1 + 1/2 cups corn
- 3 corn tortillas, cut into small cubes
- 1 tablespoon chili powder like McCormick
- 1 teaspoon ground cumin
- 1/2 teaspoon oregano (preferably Mexican), crushed between fingertips
- 1 + 1/4 pounds lean ground beef
- 1 cup brown or white rice
- 1 + 1/2 cups shredded sharp cheddar cheese or monterey jack, plus more for serving
- 1 cup sour cream, plus more for serving
- corn tortilla chips, for serving
Lavender Coconut Macarons

Using a fine mesh strainer, sift the almond flour and powdered sugar into a medium bowl
- For the macarons:
- 2/3 cup almond flour
- 1 1/2 cups powdered sugar
- 3 large egg whites, room temperature
- pinch salt
- 1/4 cup granulated white sugar
- 1/2 teaspoon coconut extract
- dried lavender, for garnish
- For the buttercream:
- 1/4 cup whole milk
- 1 tablespoon dried lavender flowers
- 4 tablespoons unsalted butter, room temperature
- 1/2 teaspoon vanilla extract
- 1 1/2 cups powdered sugar
- 10-15 drops purple (or a combo of red and blue) food coloring

- 1/2 cup (50 g) sweetened dessicated/flaked coconut
- 3/4 cup (about 105 g) plain flour
- 100 g (7 tbsp) cold butter, cut into cubes
- 1/3 cup (about 40 g) icing sugar
- 1/4 tsp salt
- Coconut cream from this recipe (If you would like a strong coconut flavour, double up and use two cans of coconut milk/cream)
- 1 cup heavy cream, whipped to stiff peaks with 1/2 tsp vanilla essence and 3 tbsp castor sugar. Refrigerate until needed
- For the topping:
- Fresh strawberries, cleaned, hulled and quartered
- Toasted coconut chips/flaked coconut
- Icing sugar to dust
