Big Italian Salad

Make the dressing: Combine all dressing ingredients in a food processor and blitz to blend
- For the dressing:
- 1 cup loosely packed fresh Italian parsley, roughly chopped
- 10 big leaves fresh basil
- 1/4 teaspoon dried oregano
- 2 cloves garlic, peeled
- 1/4 cup red wine vinegar, best quality such as Pompeian Gourmet
- 3/4 cup extra virgin olive oil, best quality such as Lucini or Colavita
- 3/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1-1/2 teaspoons honey
- For the salad:
- 1 large head romaine lettuce, washed, dried and cut into large, bite-sized pieces
- 1 large red bell pepper, chopped
- 1 cup chopped hothouse cucumbers
- 1 large carrot, peeled into ribbons
- Handful grape tomatoes, halved
- Handful pitted olives
- Ricotta Salata (see note) or Feta, crumbled to taste

In the bowl of an electric mixer, blend sweetened condensed milk and cold water until combined
- 1 can (14oz) sweetened condensed milk
- 1 1/2 cups cold water (filtered is best)
- 1 small box (3.4 oz.) instant vanilla pudding mix
- 3 cups heavy whipping cream
- 1 box of Nilla Wafers (cookies)
- 4 medium bananas

Graham Cake: Preheat oven to 350° Spray two 8" cake pans with baking spray

- 1 2/3 cups graham cracker crumbs (about 24 squares)
- 1/2 cup flour

Banana Split Cake

For the chocolate cake layer: In a large mixing bowl, use an electric mixer to beat butter and sugar for 5 minutes
- FOR THE CHOCOLATE CAKE LAYER:
- 1/4 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 3/4 cup all-purpose flour
- 1/4 cup Rodelle baking cocoa**
- 1/4 tsp kosher salt
- 1/2 tsp baking soda
- 1/4 tsp baking powder
- 1/4 cup brewed coffee, cooled
- 1/4 cup milk
- FOR THE BANANA CAKE LAYERS:
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp Rodelle pure vanilla extract
- 3 large bananas, very ripe
- 1 3/4 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda

- FOR THE WHIPPED CREAM FROSTING:
- 3 cup heavy whipping cream
