Broiled Citrus Vanilla Bean Ice Cream

Cut all citrus in half and dip the cut ends in sugar
- 1 Small Lemon
- 2 Small Blood Oranges
- 2 Clementines
- 1 Orange
- 1/2 Vanilla Bean
- 3/4 C. Sugar + extra for dipping citrus halves
- 2 1/2 C. Heavy Cream
- 1/2 C. Whole Milk
- 3 drops Orange Oil(food grade) or orange extract
Salted Caramel Ice Cream

Combine the sugar and the butter in a medium size saucepan, over medium heat
- 3/4 cup light brown sugar
- 6 tablespoons butter
- 1 1/2 cups heavy cream
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/8 teaspoon fine sea salt
Tad's Roasted Potatoes

- 8 sprigs hearty herbs (such as thyme, rosemary, and/or sage)
- 4 garlic cloves, unpeeled, lightly crushed
- 3 pounds Yukon Gold potatoes, unpeeled, cut into 3/4" pieces

Coconut Baked French Toast With Oatmeal Crumble

Slice challah bread in ¾” thick slices and set aside
- For almond crumble:
- 1 loaf challah bread
- 5 eggs
- 1 cup Almond Breeze Almondmilk Coconutmilk Original
- 2 tablespoons sugar

Preheat oven to 400°F (204°C)
- 2 cups (240g) all-purpose flour (measured correctly), plus more for hands and work surface
- 2 and 1/2 teaspoons baking powder
- 1 and 1/4 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup (115g) unsalted butter, frozen
- 1/2 cup (120ml) heavy cream
- 1 large Eggland's Best egg
- 1/2 cup (100g) packed light or dark brown sugar
- 1 teaspoon vanilla extract
- 1 heaping cup (125g) peeled and chopped apple (I use Granny Smith)1
- optional: 1 Tablespoon cream and coarse sugar
- 1/2 cup (120ml) store-bought or homemade caramel sauce
Baked Fish Tacos with Mango Salsa

Preheat the oven to 375F degrees
- Fish:
- 1 lb wild halibut (I buy wild caught frozen halibut from a local health food store)
- 1 tablespoon olive oil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon coriander
- 1/4 teaspoon ground cumin
- 1/4 teaspoon kosher salt
- juice of 1 lime
- Mango Salsa:
- 2 cups diced mango (about 3 mangos)
- 1/2 cup diced red bell pepper
- 2 tablespoons minced red onion
- 2 tablespoons minced fresh cilantro
- 1/2 jalapeño, seeded and diced (add seeds or the whole jalapeño if desired)
- juice of 1-2 limes
- pinch kosher salt
- corn tortillas to serve

- 1 Tablespoon butter
- 1/2 cup shredded carrots
- 1/2 cup diced and peeled Granny Smith apple
- 1 cup nonfat milk
- 3 cups water
- 2 cups dry, old-fashioned oats
- 1/2 cup golden raisins
- 1/4 cup light brown sugar
- 2 Tablespoons agave syrup
- 1 Tablespoon vanilla bean paste
- 1 teaspoon ground cinnamon
