Mocha Crunch Donuts

Make the mocha toffee crunch: Preheat oven to 350°F
- for the mocha toffee crunch:
- 1/2 cup light brown sugar
- 1/3 cup all-purpose flour
- 1 teaspoon espresso powder
- 1 teaspoon cocoa powder
- 1/4 teaspoon salt
- 1/4 cup salted butter, cold, cut into chunks
- for the donuts:
- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa
- 1/3 cup light brown sugar
- 2 teaspoons espresso powder
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 large egg, room temperature
- 1/3 cup plain yogurt (any will do)
- 1/3 cup milk
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- for the chocolate ganache:
- 4 ounces dark chocolate
- 1 teaspoon espresso powder
- 1 teaspoon coconut oil (see instructions)
- for the coffee icing:
- 1/2 cup powdered sugar
- 1 tablespoon heavy cream
- 1 tablespoon coffee (can also sub 1 T heavy cream + 1/2 teaspoon espresso powder)
