- 4 teaspoons chicken bouillon powder or 4 bouillon cubes
- 1 Tablespoon ground coriander
- 1 Tablespoon ground oregano
- 2 teaspoons cumin
- 2 teaspoons onion powder
- 1 teaspoon garlic powder
- 1 teaspoon fine ground pepper
- 2 whole bay leaves
- 1 (8 lb) pork butt roast*
- 2 (28 ounce) cans green enchilada sauce (mild or medium depending on what heat level you prefer)
Spicy Orange and Chili Pork Stir-fry with Asian Greens

Remove silver-skin and trim any fat from pork tenderloin and cut into thin slices
- Sauce:
- 1 pork tenderloin, trimmed and sliced into thin slices
- 6-8 baby bok choy or shanghai choy

- 2 stalks celery, diced
- 2 cups corn kernels, frozen, canned or roasted
- 2 cups chicken broth
- 2 cups milk
- 3 cloves garlic, minced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- Pinch of cayenne pepper
- 1 bay leaf
- Kosher salt and freshly ground black pepper, to taste

- 2 cups cooked ham, diced into small cubes (I used left over ham roast, ham steak works too)
- 6 slices bacon, cooked and crumbled
- 5 1/2 Tbsp butter, divided
- 1 medium yellow onion, diced (1 1/2 cups)
- 2 carrots, peeled and diced (3/4 cup)
- 2 celery stalks, diced (3/4 cup)
- 2 (14.5 oz) cans low-sodium chicken broth
- 5 medium red potatoes (1 3/4 lb), diced into 3/4-inch cubes
- 3/4 tsp dried oregano
- 1/4 tsp dried thyme
- 1 bay leaf
- Salt and freshly ground black pepper, to taste
- 1 1/2 cups fresh corn kernels (or frozen)
- 1/4 cup + 2 Tbsp all-purpose flour
- 3 cups milk
- 1/2 cup sour cream or heavy cream (I've tried and like both versions)
