- Chocolate Cake:
- 1/2 cup unsweetened dark cocoa powder
- 1 cup boiling water
- 1/2 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 1/2 cups AP flour
- 1/2 teaspoon kosher salt
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- Strawberry Cream Cheese Frosting:
- 2 strawberries, minced
- 8 ounces cream cheese, softened
- 1/2 cup butter, softened
- 4 cups powdered sugar
- pinch kosher salt
- 16 strawberries. Rinsed and patted dry
- 4 ounces semi-sweet chocolate pieces

Chicken Pad Thai

To make the sauce, combine the water, tamarind concentrate, palm sugar, and fish sauce in a small sauce pan

Pumpkin Scalloped Potatoes

1. Preheat the oven to 375 degrees F
- 1 1/2 cups heavy whipping cream
- 1/2 cup unsweetened pumpkin puree
- 1 sprig fresh thyme
- 2 garlic cloves, smashed
- 1/4 teaspoon ground nutmeg (freshly grated is best!)
- 2 pounds Yukon Gold white potatoes, peeled and cut into 1/8-inch slices
- 2 pounds yams or sweet potatoes, peeled and cut into 1/8-inch slices

- 1 teaspoon vanilla extract
- 1-2 dashes of cinnamon (optional)
- STRAWBERRY INGREDIENTS:
- 2 pounds fresh strawberries, hulled and quartered
