Easy Chicken Pad Thai

In a medium bowl combine the sugar, pepper, tamarind, Sriracha, fish sauce and chicken broth
- Pad Thai Sauce:
- 1/4 cup plus 2 tablespoons Light Brown Sugar
- 1/4 teaspoon White Pepper
- 2 teaspoons Tamarind Paste {brands may be different so you might need to adjust more or less}
- 1-1/2 teaspoon to 1 tablespoon Sriracha {depending on how spicy you want it}
- 1/4 cup Fish Sauce
- 1/4 cup low-sodium Chicken Broth
- Cornstarch Slurry {1 tablespoon cornstarch plus 1 tablespoon cold water, stirred}
- FOR THE CHICKEN:
- 1 pound boneless, skinless Chicken Breast Halves, sliced thin {about 4 breast halves}
- 1 tablespoon Cornstarch
- 3 tablespoons Low-Sodium Tamari
- FOR THE STIR-FRY:
- 10-12 ounces of wide Rice Noodles
- 1 tablespoon olive oil or grapseed oil
- 4 to 5 cloves fresh garlic, minced or squeezed through garlic press
- 4 Green Onions, sliced {separate light green from dark green parts}
- 1 heaping cup rinsed Bean Sprouts
- 1/3 cup chopped lightly salted, roasted peanuts
- 1/4 cup torn fresh cilantro
Potato Casserole with Bacon and Caramelized Onion

1. Adjust oven rack to lower-middle position and heat oven to 425 degrees
- 3 slices thick-cut bacon, cut into 1/2-inch pieces
- 1 large onion, halved and sliced thin
- 1 1/4 teaspoons salt
- 2 teaspoons chopped fresh thyme
- 1/2 teaspoon pepper
- 1 1/4 cups low-sodium chicken broth
- 1 1/4 cups beef broth
- 3 pounds Yukon gold potatoes, peeled
- 2 tablespoons unsalted butter, cut into 4 pieces
Raspberry Rosé Wine Cupcakes

First, prepare cupcakes. Preheat oven to 350°F
- 1/2 cup (1 stick) unsalted butter, at room temperature
- 1 cup granulated sugar
- 2 large eggs
- 1 large egg yolk
- 1/2 cup rosé wine
- 1/2 teaspoon almond extract
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup rosé wine
- 1 cup raspberries, fresh or frozen
- 4 cups powdered sugar, sifted
- 1 cup (2 sticks) unsalted butter, at room temperature

Pear Bourbon Crumble Pie

To make the crust, in a medium bowl, whisk together flour, sugar, and salt
- For the Crust:
- 1 1/4 cups all-purpose flour
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/2 cup (1 stick, 4 ounces) cold unsalted butter, cut into small chunks
- 1/4 cup plus 1 to 2 tablespoon cold buttermilk
- For the Filling:
- 6-7 ripe but firm pears, any variety, peeled and sliced, about 5 cups sliced
- juice of 1 lemon
- 2 tablespoons granulated sugar
- 2/3 cup lightly packed brown sugar
- 2 tablespoons all-purpose flour
- 1/2 teaspoon ground ginger
- 1/4 teaspoon allspice
- 1/4 teaspoon ground cardamom
- pinch freshly grated nutmeg
- pinch of fresh cracked black pepper
- 1/2 teaspoon kosher salt
- 3 tablespoons bourbon
- 2 dashes bitters

- For the Crumble:
- 3/4 cup all-purpose flour
- 3/4 cup old-fashioned oats
- 2/3 cup granulated sugar
- large pinch of salt
- 6 tablespoons cold unsalted butter, cut into small chunks
- 1/2 cup coarsely chopped pecans
Peanut Noodles With Chicken

Cook the DeLallo linguine noodles according to the package directions
- For the Peanut Dressing:
- 1 pound DeLallo linguine noodles
- 3 chicken breasts, cooked and sliced or chopped, about 4 cups
- 5 carrots, peeled and thinly shaved into ribbons
- 3 seedless cucumbers, thinly shaved into ribbons
- 2 bell peppers, red, yellow or orange, seeded and thinly sliced
- 6 green onions, chopped thinly
- 1/2 bunch cilantro leaves, chopped
- 4 garlic cloves, minced or pressed
- 1-inch knob of garlic, peeled and grated
- 1/2 cup creamy peanut butter
- 1/3 to 1/2 cup water
- 3 tablespoons rice vinegar
- 2 tablespoons sesame oil
- 2 tablespoons soy sauce
- 1 tablespoon hot chile sauce, like Sambal Olek
Midsummer Cocktail

Add all your ingredients to a mixing glass full of ice, and stir for 30-40 seconds
- 1 1/2 oz aquavit
- 3/4 oz manzanilla sherry
- 1/4 oz St. Germain elderflower liqueur
- twist of lemon for garnish (optional)
Molten Nutella Lava Cakes for Two

- 4 tablespoons (1/2 stick) unsalted butter
- 1/2 cup bittersweet chocolate chips
- 1 egg
- 1 egg yolk
- 3 tablespoons granulated sugar
- 1/8 teaspoon salt
- 1 tablespoon natural cocoa powder
- 2 tablespoons Nutella
- 2 teaspoons powdered sugar (optional, for garnish)
Sloppy Joes

Add butter to a large skillet or dutch oven over medium high heat; add the onion, green pepper, and fennel
- 2 Tbsp. butter
- 1 large sweet onion, diced
- 1 large green bell pepper, diced
- 1 fennel bulb, diced (optional)
