Brown Sugar Blueberry Banana Bread with Blueberry Butter

- Bread:
- 1 large egg
- 6 ounces plain or vanilla Greek yogurt (sour cream may be substituted))
- 1/2 cup liquid-state coconut oil (canola or vegetable oil may be substituted)
- 1/2 cup light brown sugar, packed
- 1/2 cup dark brown sugar, packed
- 2 teaspoons vanilla extract
- 1 to 2 teaspoons cinnamon, or to taste
- 1 teaspoon ground nutmeg, or to taste
- 1 to 1 1/4 cups mashed ripe bananas (about 2 large or 3 small/medium)
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- pinch salt, optional and to taste
- 1 1/2 about 1 1/2 cups frozen blueberries (keep them frozen and don't thaw; fresh may be substituted)
- Blueberry Butter:
- 1/2 cup unsalted butter (1 stick), very well softened
- 1/2 about 1/2 cup blueberries, fresh or frozen (if using frozen, make sure they're well-drained)
Easy Chicken Pad Thai

In a medium bowl combine the sugar, pepper, tamarind, Sriracha, fish sauce and chicken broth
- Pad Thai Sauce:
- 1/4 cup plus 2 tablespoons Light Brown Sugar
- 1/4 teaspoon White Pepper
- 2 teaspoons Tamarind Paste {brands may be different so you might need to adjust more or less}
- 1-1/2 teaspoon to 1 tablespoon Sriracha {depending on how spicy you want it}
- 1/4 cup Fish Sauce
- 1/4 cup low-sodium Chicken Broth
- Cornstarch Slurry {1 tablespoon cornstarch plus 1 tablespoon cold water, stirred}
- FOR THE CHICKEN:
- 1 pound boneless, skinless Chicken Breast Halves, sliced thin {about 4 breast halves}
- 1 tablespoon Cornstarch
- 3 tablespoons Low-Sodium Tamari
- FOR THE STIR-FRY:
- 10-12 ounces of wide Rice Noodles
- 1 tablespoon olive oil or grapseed oil
- 4 to 5 cloves fresh garlic, minced or squeezed through garlic press
- 4 Green Onions, sliced {separate light green from dark green parts}
- 1 heaping cup rinsed Bean Sprouts
- 1/3 cup chopped lightly salted, roasted peanuts
- 1/4 cup torn fresh cilantro

- 1/2 pound of sharp yellow cheddar

- cheddar crust:
- 2 1/2 cups all purpose flour
- 1 teaspoon pure cane sugar
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, frozen and grated
- 3/4 cup grated sharp cheddar cheese
- 2 to 2 1/2 tablespoons ice water
- apple filling:
- 4 granny smith apples, peeled cored and thinly sliced
- 4 golden delicious apples, peeled cored and thinly sliced
- juice of 1/2 lemon
- 2/3 cup light brown sugar
- 1/3 cup pure cane sugar
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoons ground nutmeg
- 1/4 teaspoon salt
- 3 tablespoons of tapioca starch or cornstarch
- 1/4 cup (1/2 stick) unsalted browned butter, cooled
- 1 egg, lightly beaten
- 2 tablespoons water

1. Preheat your oven to 350° F and thoroughly grease 2 standard donut pans with softened butter
- For the donuts:
- 3/4 cup Ancient Harvest quinoa flour
- 1/2 cup almond meal
