Scott's Birthday Lasagna

In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned
- 1 pound sweet Italian sausage
- 3/4 pound lean ground beef
- 1/2 cup minced onion
- 2 cloves garlic, crushed
- 1 (28 ounce) can crushed tomatoes
- 2 (6 ounce) cans tomato paste
- 2 (6.5 ounce) cans canned tomato sauce
- 1/2 cup water
- 2 tablespoons white sugar
- 1 1/2 teaspoons dried basil leaves
- 1/2 teaspoon fennel seeds
- 1 teaspoon Italian seasoning
- 1 tablespoon salt
- 1/4 teaspoon ground black pepper
- 4 tablespoons chopped fresh parsley
- 12 lasagna noodles
- 16 ounces ricotta cheese
- 1 egg
- 1/2 teaspoon salt
- 3/4 pound mozzarella cheese, sliced
- 3/4 cup grated Parmesan cheese
Green Veggie Pancakes

- 1 cup zucchini, broccoli, and/or cauliflower
- 1/4 cup flour
- 1/2 teaspoon kosher salt
- 1 large egg

- 1/4 teaspoon garlic powder

Spaghetti PIE

SAUCE: 1. Brown onions and green pepper in small amount of oil until soft
- PIE SHELL:
- 6 oz. spaghetti
- 2 tbsp. butter
- 1 well beaten egg
- 1/3 c. grated Parmesan cheese
- FILLING:
- 1 c. Ricotta cheese
- 1 c. Mozzarella cheese, shredded
- SAUCE:
- 1 lb. ground turkey
- 1/2 - 3/4 c. chopped onion
- 1/2 diced green pepper (optional)
- 1 (15 oz.) jar spaghetti sauce

Spaghetti Squash w/Tomato, Feta & Olives

- 1 spaghetti squash, halved lengthwise and seeded
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 1 clove garlic, minced
- 1 1/2 cups chopped tomatoes
- 3/4 cup crumbled feta cheese
- 3 tablespoons sliced black olives
- 2 tablespoons chopped fresh basil
Asian crab cakes with avocado wasabi sauce

CRABCAKES: Gently mix together all ingredients
- CRABCAKES:
- 4-5 ounces lump crabmeat
- 1 small shallot, chopped (about 1/4 cup)
- 1 garlic clove, minced
- 1/2 tablespoon grated fresh ginger
- 1 teaspoon honey
- 1 egg white, beaten
- 3 tablespoons regular coconut milk (not light), or more if needed
- 1/2 lime, juice and zest
- 1/4 cup panko, plus more to shape cakes
- 2 tablespoons fresh cilantro, roughly chopped
- pinches of salt and pepper
- 1/4 to 1/2 teaspoon sriracha (optional)
- AVOCADO WASABI SAUCE:
- the leftovers can become a salad dressing, sandwich spread, veggie dip, etc…
- 1/4 cup silken tofu
- 1/2 an avocado
- juice of 1/4 to 1/2 a lemon (to taste)
- 1/2 teaspoon minced garlic
- pinches of salt & pepper, to taste
- 1 teaspoon onion powder (or 1 tablespoon minced onion – both optional)
- 1/4 or 1/2 teaspoon wasabi paste, (or to taste depending on your spice preference)
