Creamy Chicken and Spinach Pasta

1. Cook the pasta according to the package directions, adding the peas during the last minute of cooking
- 3/4 pound gemelli, penne, or another short pasta
- 1 cup frozen peas
- 1 tablespoon unsalted butter
- 2 cloves garlic, chopped
- 1 cup heavy cream
- 2 cups shredded rotisserie chicken (about half of a 2- to 2 1/2-pound bird)
- 5 ounces baby spinach (about 6 cups)
- kosher salt and black pepper
- grated Parmesan, for serving
Swiss Chard & Egg Casserole

The trick is to toss the whisked eggs with the chard leaves raw
- a bit of olive oil, for the pan, to cook the mushrooms
- 1 cup sliced cremini mushrooms
- 4-5 large chard leaves, stems removed, leaves coarsely chopped
- 1/4 cup scallions, chopped
- 6 tablespoons freshly grated pecorino cheese
- 1/4 cup panko bread crumbs
- 5 large eggs
- 1 clove garlic, minced
- 1 teaspoon dijon mustard
- a few pinches of red pepper flakes
- salt & pepper
Meyer Lemon Bars

You don't have to use meyer lemons for this recipe but if you can find them you won't regret it
- CRUST
- 1 1/4 cups all-purpose flour
- 1/2 cup powdered sugar, plus more to sprinkle on the finished bars
- pinch of salt
- 8 Tbls unsalted butter, still cool and cut into 8 pieces
- FILLING
- 7 large egg yolks
- 2 large eggs
- 1 cup + 2 Tbls sugar
- 2/3 cup meyer lemon juice (from about 4-5 medium lemons)
- finely grated zest from the lemons
- 1/2 teaspoon salt
- 4 Tbls unsalted butter, cut in to 4 pieces

Broccoli with Garlic Butter and Cashews

Place the broccoli into a large pot with about 1 inch of water in the bottom
- 1 1/2 pounds fresh broccoli, cut into bite size pieces
- 1/3 cup butter
- 1 tablespoon brown sugar
- 3 tablespoons soy sauce
- 2 teaspoons white vinegar
- 1/4 teaspoon ground black pepper
- 2 cloves garlic, minced
- 1/3 cup chopped salted cashews
Butternut Squash Croquettes

These are baked, not fried… but I promise they’re so good that you likely won’t even notice
- INGREDIENTS:
- 1/2 a medium sized butternut squash, roasted until soft (about 1.5 cups of mash)
- 1/3 cup garbanzo bean flour
- 1 clove minced garlic
- 1/2 tablespoon olive oil
- 1/2 teaspoon cumin
- 1/2 teaspoon smoked paprika
- pinch of cayenne
- splash of maple syrup or agave (optional)
- 1/4 cup chopped scallions, white and green parts
- 1/4 cup chopped cilantro (optional)
- 1/4 cup crumbled feta cheese (optional)
- salt & pepper
- 1 about 1 cup panko bread crumbs, for rolling
- YOGURT SAUCE:
- 1/2 cup plain yogurt
- juice and zest of one lime (or 1/2 a lemon)
- splash of olive oil
- 1 garlic clove, minced
- a few tablespoons of chopped cilantro
- a few pinches of red pepper flakes (optional)
