Chicken and Toasted Bread Salad with Raisins, Pine Nuts, and Capers

1. Pour boiling water over the raisins and leave them to plump up for 15 minutes or so
- For the Salad:
- 1/2 * 1/2 cup raisins
- 5 * About 5 tablespoons olive oil
- 8 * 8 ounces rustic white bread, coarsely torn
- 3 * 3 cups leftover cooked chicken, torn into pieces
- 5 * 5 tablespoons pine nuts
- 2 * 2 tablespoons capers, rinsed
- 4-1/2 * 4-1/2 ounces salad greens (baby spinach and arugula are good)
- For the Dressing:
- 2 * 2 tablespoons medium-dry sherry
- 1 * 1 garlic clove, finely chopped
- 1-1/2 * 1-1/2 tablespoons sherry vinegar
- 1/2 * 1/2 teaspoon Dijon mustard
- * Salt and pepper
- * Good pinch of sugar
- 5 * 5 tablespoons extra-virgin olive oil
Pan-Grilled Corn With Chile

1. Stand an ear of corn in a shallow bowl, stem-side down
- 6 ears of corn, shucked
- 1 tablespoon corn oil
- 1 jalaper haba chile, stemmed, seeded and minced, or teaspoon dried red chili flakes, or to taste
- Salt
- Fresh chopped fresh cilantro leaves for garnish
- Lime wedges, optional.
Mom and Dad's BBQ Beef

- 3-4 pounds cubed chuck
- 2 c chopped onion
- 4 cloves garlic
- 1/4 c butter
- 2 cans tomato paste
- 4 tsp paprika
- 2 tsp dry mustard
- 6 T sugar
- 6 T cider vinegar
- 6 T worcestershire

Make base: Preheat oven to 350°F with a rack in the middle of the oven
- Crust
- 1 cup plus 2 tablespoons white whole wheat flour, spelt flour or matzo cake meal

- 6 tablespoons natural cane sugar or lightly packed light brown sugar

- 3 quarts salted water in a 4-quart pot
- 1/2 * 1/2 pound (2 cups) imported elbow macaroni or penne pasta
- 1 * 1 large egg
- 1 * 1 cup milk, half-and-half, or heavy cream
- 1 * 1 small garlic clove
- 3/4 * 3/4 medium onion, coarse chopped
- 1 * 1 generous cup (5 ounces) shredded good-quality extra-sharp cheddar cheese
- 5 * 5 ounces cream cheese, crumbled
- 2/3 * 2/3 cup (3 ounces) shredded Gruyère, Appenzeller, or Manchego cheese
- * Generous 1/8 teaspoon red pepper flakes
- * Generous 1/8 teaspoon salt
- * Generous 1/8 teaspoon fresh-ground black pepper
- * Generous 1/4 teaspoon sweet paprika, Hungarian or Spanish
