Heat wok or large frying pan over high heat
- 1 Tbsp olive oil
- 1 lb boned, skinned chicken thighs, halved
- 1/4 tsp each: tumeric, cayenne and white pepper
- 1 large ripe mango, cut into 1-inch chunks
- 3 Tbsp each: lime juice and Vietnamese fish sauce
- 4 green onions, sliced diagonally
- steamed rice
- 2 Tbsp thinly sliced fresh basil leaves

- 4 cups low sodium chicken broth
- 2 pieces (4 inches long) lemongrass, root end crushed

- 1/4 cup olive oil
- 1 tablespoon olive oil

- 3/4 lb linguine
- 1 1/2 lbs boneless skinless chicken breasts, cut in strips
- 2 poblano peppers, seeded, julienned
- 3 plum tomatoes, seeded and diced
- 1/2 cup fresh basil, thinly sliced
- 4 ounces prosciutto, chopped
- 2 tablespoons butter
- 1 cup parmesan cheese, grated, divided
