Midnight Chocolate Cake

- 1 teaspoon baking soda

- 2 large egg whites
- 1 teaspoon vanilla
- Whipped frosting
Tuscan Tomato-White Bean Soup

Directions Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium-high heat
- 3 tablespoons extra-virgin olive oil, plus more for drizzling
- 1 large onion, chopped
- 5 cloves garlic, smashed
- Kosher salt
- 2 tablespoons tomato paste
- 2 pounds tomatoes, chopped
- 2 15 -ounce cans no-salt-added white beans, drained and rinsed
- 1 quart low-sodium vegetable or chicken broth
- 1 sprig rosemary, plus 1 teaspoon chopped leaves
- 1/4 teaspoon red pepper flakes, plus more for sprinkling
- 4 cups cubed ciabatta bread (about 4 ounces)
- 1/2 cup shredded mozzarella cheese (about 2 ounces)
Caprese Tomato Bites Recipe

Scoop out and discard pulp of cherry tomatoes
- 1 pint cherry tomatoes, halved
- 3 tablespoons heavy whipping cream
- 1/2 pound fresh mozzarella cheese, sliced
- 6 fresh basil leaves
- 1 garlic clove, minced
- 1 tablespoon balsamic vinegar
Chicken, Shrimp and Sausage Stew

Preparation Sauté sausage in heavy large pot over medium heat until brown, about 4 minutes
- 1 pound andouille sausage,* cut into rounds
- 6 large chicken thighs (about 2 1/4 pounds)
- 3 cups chopped onions
- 2 1/3 cups chopped green bell peppers
- 1 1/4 cups chopped red bell pepper
- 6 large garlic cloves, chopped
- 3 tablespoons chopped fresh oregano
- 2 tablespoons chopped fresh thyme
- 1 tablespoon paprika
- 1 28-ounce can diced tomatoes with juices
- 1 14 1/2-ounce can low-salt chicken broth
- 1 cup dry white wine
- 3/4 cup sliced pimiento-stuffed green olives
- 1 pound uncooked large shrimp, peeled, deveined
- A smoked pork and beef sausage, available at specialty foods stores. Hot links, smoked bratwurst, kielbasa or smoked Hungarian sausage can be substituted.
