Chicken and Corn Chowder

- 10 bacon slices, chopped
- 2 tablespoons (1/4 stick) butter
- 3 medium onions, chopped
- 2 cups chopped red bell peppers (about 2 large)
- 1/4 cup all purpose flour
- 9 cups low-salt chicken broth
- 4 cups 1/2-inch cubes peeled seeded butternut squash (cut from one 1 3/4-pound squash)
- 1 1/2 pounds russet potatoes, peeled, cut into 1/2-inch cubes
- 1 1/2 tablespoons chopped fresh thyme
- 2 16-ounce bags frozen corn kernels
- 1 cup whipping cream
- 4 cups diced skinned roast chicken
- 2 cups chopped green onions
- 1/2 cup plus 2 tablespoons chopped fresh cilantro
Pasta with Andouille Sausage, Shrimp and Mushrooms

Directions: Preheat the oven to 375°F
- 6 whole shallots, peeled
- 6 large garlic cloves unpeeled
- 2 Tbsp. Olive oil
- 1/2 c. dry white wine
- 1 c. whipping cream
- 1/2 lb. fresh shiitake mushrooms, stemmed and sliced
- 1/2 c. sliced black olives of your choice
- 1/2 c. sliced drained oil-packed sun-dried tomatoes
- 1 Tbsp. minced garlic
- 1 lb. andouille sausage sliced
- 2 Tbsp. Jalapeno chilies, minced
- 1 c. bottled clam juice
- 12 large uncooked shrimp, peeled and deveined
- 3/4 lb. tagliatelle pasta
- 4 scallions chopped

Lemon-Ginger Bundt Cake

Directions Preheat oven to 350 degrees
- 1 cup (2 sticks) unsalted butter, room temperature, plus more for pan
- 3 cups all-purpose flour (spooned and leveled), plus more for pan
- 2 tablespoons finely grated lemon zest and 1/3 cup fresh lemon juice (from 2 lemons)
- 1/3 cup minced crystallized ginger
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 1/2 cups granulated sugar
- 6 large eggs
- 1 cup sour cream
- Confectioners' sugar, for dusting
Baked Macaroni with Mortadella and Mozzarella

- 1/4 cup extra-virgin olive oil
- 1 onion, finely chopped
- 1 garlic clove, minced
- 1 pound ground pork
- 1 cup dry white wine
- One 28-ounce can crushed tomatoes
- Generous pinch of crushed red pepper
- Kosher salt
- 2 large eggs
- 12 ounces elbow macaroni
- 2 tablespoons finely chopped basil
- 2 tablespoons finely chopped parsley
- One 1/4-pound piece of mortadella, cut into small dice
- 1 pound fresh mozzarella, cut into bite-size pieces
- 1 cup grated Parmigiano-Reggiano
