Spicy Whole Roasted Cauliflower

1. Preheat the oven to 400° and lightly grease a small baking sheet with vegetable oil
- 1 tablespoon vegetable oil
- 1 head cauliflower
- 1 1/2 cups plain Greek yogurt
- 1 lime, zested and juiced
- 2 tablespoons chile powder
- 1 tablespoon cumin
- 1 tablespoon garlic powder
- 1 teaspoon curry powder

Stir together bread, garlic, vinegar, and 3/4 cup cold water in a medium bowl
- 1 cup small pieces white bread (torn from day-old rustic bread, crust removed)

- 1/2 English cucumber, peeled and cut into 1-inch pieces, plus 8 very thin rounds for garnish

- 2 tsp extra virgin olive oil
- 6 scallions (whites and 2" of green), trimmed and coarsely chopped
- 6 egg whites
- 4 whole eggs
- 1/2 tsp dried tarragon or 1 1/2 tsp fresh, minced
- 1/4 c cold water
- 2 ounces thinly sliced smoked salmon, cut into 1/2" wide pieces

Moroccan Chicken with Olives and Lemon (Chicken Tagine)

Bone-in chicken parts can be substituted for the whole chicken
- 1-1/4 teaspoons sweet paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground cinnamon
- 3 strips lemon zest (each about 2 inches by 3/4 inch)
- 3 tablespoons fresh lemon juice, from 1 to 2 lemons
- 5 medium cloves garlic, minced or pressed through garlic press (about 5 teaspoons)
- 1 whole chicken (3 1/2 to 4 pounds), cut into 8 pieces (4 breast pieces, 2 thighs, 2 drumsticks; wings reserved for another use) and trimmed of excess fat
- Salt and ground black pepper
- 1 tablespoon olive oil
- 1 large onion, halved and cut into 1/4-inch slices (about 3 cups)
- 1 3/4 cups low-sodium chicken broth
- 1 tablespoon honey
- 2 medium carrots, peeled and cut crosswise into 1/2-inch-thick coins, very large pieces cut into half-moons (about 2 cups)
