Spicy Italian Meatloaf

Pre-heat the oven to 350˚ F
- 1 cup fresh breadcrumbs (torn up day old bread is good)
- 1/2 cup milk
- 2 tablespoons olive oil, divided
- 1 onion, chopped
- 3 cloves garlic, sliced
- 1 pound ground beef
- 1/2 pound hot Italian sausage, casings removed and meat broken up
- 1/2 pound sweet Italian sausage, casings removed and meat broken up
- 1/2 cup chopped roasted red pepper
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 cup finely chopped fresh parsley
- 2 eggs
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 vine-ripened tomatoes, sliced (1/4-inch slices)
- 6 tablespoons Sir Kensington’s Gourmet Scooping Ketchup
- 2 tablespoons brown sugar
Emeril's Southern-Style Chicken and Dumplings

Try these Southern-style chicken and dumplings from chef Emeril Lagasse
- 5 pounds chicken leg quarters (8 to 10)
- 4 carrots, cut into thirds, plus 1 cup diced
- 3 onions, cut into large pieces, plus 1 cup chopped
- 2 celery stalks, cut into thirds, plus 1/2 cup chopped
- 6 cloves garlic, peeled and smashed
- 6 sprigs fresh thyme
- Leaves from 1 large sprig fresh rosemary
- 2 bay leaves
- 8 cups chicken stock or canned low- sodium chicken broth
- 4 cups water
- 1 tablespoon plus 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon crushed red pepper

- 1 whole onion, diced
- 1/3 cup all-purpose flour
- 4 cups whole milk

- 1 pinch nutmeg
- 4 heads broccoli, cut into florets
