Preheat oven to 350 degrees F (175 degrees C)

  • Tools needed: melon baller, large skillet, large sauce pan with lid, aluminum foil and a large baking dish.
  • 4 patty pan squash (blossom and stem removed)

  • 1 small diced onion (about 1/3 cup) - I prefer to dice using the food processor. It saves time and prevents teary eyes.

  • 4 tablespoons of finely grated Parmesan cheese ( I like to use more by sprinkling it on top.)
