Pineapple Upside Down Cake

Preheat oven to 350°F. Make topping: Cut pineapple crosswise into 3/8-inch-thick pieces
- For topping:
- 1/2 medium pineapple, peeled, quartered lengthwise, and cored
- 3/4 stick unsalted butter
- 3/4 cup packed light brown sugar
- For batter:
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons ground cardamom
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 stick unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla
- 1 tablespoon dark rum
- 1/2 cup unsweetened pineapple juice
- 2 tablespoons dark rum for sprinkling over cake

Wash and towel dry brisket
- Brisket: 4-5 lbs; 1st or center cut only.
- Garlic: 1 medium clove per lb of meat; minced.
- Kosher Salt: 1.5-2 cups.
- Brown Sugar: 1 cup (do not use Splenda-based).
- Mixed Pickling Spices: 1/3 cup.
- Bay Leaves: 1 for ea 2 lbs of meat.
- Water: 1.5-2 qts.
- Saltpeter: 2-3 TBL (optional to retain reddish color).
- Beer: 12 oz traditional (no ambers or "light").
