Preheat oven to 350°F. Make topping: Cut pineapple crosswise into 3/8-inch-thick pieces

  • For topping:
  • 1/2 medium pineapple, peeled, quartered lengthwise, and cored
  • 3/4 stick unsalted butter
  • 3/4 cup packed light brown sugar
  • For batter:
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons ground cardamom
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 stick unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1 tablespoon dark rum
  • 1/2 cup unsweetened pineapple juice
  • 2 tablespoons dark rum for sprinkling over cake

Wash and towel dry brisket

  • Brisket: 4-5 lbs; 1st or center cut only.
  • Garlic: 1 medium clove per lb of meat; minced.
  • Kosher Salt: 1.5-2 cups.
  • Brown Sugar: 1 cup (do not use Splenda-based).
  • Mixed Pickling Spices: 1/3 cup.
  • Bay Leaves: 1 for ea 2 lbs of meat.
  • Water: 1.5-2 qts.
  • Saltpeter: 2-3 TBL (optional to retain reddish color).
  • Beer: 12 oz traditional (no ambers or "light").
