In a wok or skillet, stir-fry the ginger and garlic in 2 tablespoons of oil until fragrant, about 30 seconds
- Dipping Sauce:
- 4 tablespoons vegetable oil
- 1-inch grated fresh ginger
- 2 cloves garlic, finely chopped
- 2 scallions, sliced thinly
- 1 carrot, cut into 1-inch julienne strips
- 1 small red pepper, cut into 1-inch julienne strips
- 1 cup Napa cabbage, shredded
- 1/4 cup chicken broth
- 2 tablespoons reduced-sodium soy sauce
- 1 tablespoon sugar
- 1 to 2 tablespoons sesame oil
- 20 wonton wrappers covered loosely with a damp paper towel to prevent drying
- 10 shrimps, cooked and minced
- 1/3 cup lite soy sauce
- 1/3 cup rice vinegar
- 1 tablespoon honey
- 1 to 2 teaspoons sesame oil
- Pinch of red pepper flakes
Pecan Pesto Shells With Sausage

Cook the pasta according to the package directions, reserving ½ cup of the cooking water
- 3/4 pound pasta shells or another short pasta
- 3 cups fresh flat-leaf parsley leaves
- 1/2 cup pecan halves
- 2 ounces grated Parmesan (about 1/2 cup), plus more for serving
- kosher salt and black pepper
- 6 tablespoons olive oil
- 3/4 pound Italian sausage, casings removed
Costa Rican Coleslaw

Preparation 1. In a small pot set over medium heat, combine the orange juice and cumin and reduce to 1/2 cup
- 2 cups fresh orange juice
- 1 1/2 tablespoons ground cumin
- 1 small head of green cabbage, cored and sliced thin
- 1 small head of red cabbage, cored and sliced thin
- 2 medium carrots, peeled and sliced into thin strips
- 1 jar or can hearts of palm, 12-14 ounces, drained and sliced into thin strips
- 1 large avocado, peeled, pitted and sliced thin
- 1 medium tomato, seeded and cut into a fine dice
- 3 tablespoons red-wine vinegar
- 1/4 cup extra-virgin olive oil

- 1/2 cup sesame seeds
- 2 tablespoons coriander seeds
- 2 tablespoons cumin seeds
- 1 teaspoon sea salt

- 1/2 teaspoon dried thyme
- For the Roasted Red Pepper Pecan Sauce:
- 1 cup Diamond Shelled Pecans
- 12 ounces bottled roasted red peppers, drained, coarsely chopped

- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
